About this Cook
I'm a newlywed, so I love having someone else to cook for now! I grew up on a farm, we have sort of a "do-it-yourself" attitude, grow your own veggies, & do a lot of preserving, I bake all my own bread. I love to cook "from scratch" as much as possible.
My favorite things to cook
I love to try new things, and learn about other cultures in the process. I work at a medical clinic with a couple of wonderful Indian doctors who recently flew us all to N.Y. for their son's wedding, so I got to try a lot of Indian food for the first time, and have been enjoying recreating some of those recipes! I also love to bake bread, cakes, cookies, etc.
My favorite family cooking traditions
My grandmother was a wonderful cook, especially baking, she taught me some of our family's Scandinavian recipes. My mom was a more "inventive" cook, she loves creating her own recipes and trying new things.
My cooking triumphs
I taught myself to make wedding cakes, and made my own! People said I was crazy to do it, but I'm glad I did, because I made it just the way I wanted it! We had chocolate cake with raspberry ganache filling, and orange pound cake both frosted with white chocolate buttercream. I do wedding cakes for friends and family a couple times a year.
My cooking tragedies
Too many to count! I learn by trial and error, and have made a lot of errors! Baking scratch cakes is difficult, and I've had a lot of bad ones in between the good ones! Once I accidentaly left the sugar out of a chocolate cake I was making for someone else, and I only figured that out because the cake came out so much flatter than usual. Luckily, I remembered what I did before I gave it to her, and had to quickly whip up a new one!

Cheesy Chicken Meatballs
These were fabulous! They were really garlicky though (and I love garlic) and I used plain cream cheese. I am sure they would be way too garlicky with the garlic cream cheese. I made a double batch and froze the meatballs on a cookie sheet, then transferred the balls to ziploc bags. I put enough in each bag for one meal for the 3 of us. Baked them for about 15-20 minutes at 400 degrees from frozen and they were perfect! (I did check the internal temp- very important to get correct) Great recipe!

Broiled Tilapia Parmesan
I was shocked at how delicious is this was! The topping it so creamy and flavorful. It's so quick and easy, too! I'll be making this again.

Whole-Wheat Chocolate Chip Cookies
I used 3 cups of my fresh ground pastry flour, no AP flour and these turned out fabulous! The only other change I made was to sub butter for margarine because I don't touch the fake stuff. They did spread a bit due to the butter but not bad and the taste was amazing. I never expected to like WW cookies as much as regular cookies! The only change I would make for next time is to reduce the sugar a bit, I thought they were plenty sweet.
