Emily's Excellent Taco Casserole
I mix in shredded skinned chicken in big chunks (cooked via Safeway or Cosco) and put a sprig of parsley on top and it is always "A hit" for a group at Potlucks.

Clam Sauce with Linguine
I had to make a few changes. Instead of mushrooms, I used I used one pound of Imitation Crab meat. I was out of Linguini, also. So I used Speghetti, unstead. I forgot to take a picture! My husband loved it so much, he remarked," NOW, you have to make it again... so you can take the picture!

Watermelon Summer Salad
I just happend to have 1/2 of watermelon in fridge, soooo; since I had all of the other ingrediences on hand, except limes, I used Myer lemon, instead. WOW! What a great salad! It is so tasty, and I thought I wouldn't like it! It's a keeper.
