Krissy's Best Ever Corn Muffins

I have been looking for a corn muffin recipe with this flavor and texture for a very, long time. These muffins are delicious. I made them with whole wheat pastry flour (as I do with all my day-to-day baking) and you couldn't tell at all. However, they are a little bit on the sweet side, at least for adult palates.Although I doubt the kids will mind at all. Next time I make them, I will cut the granulated sugar in half. I have been holding a spot in my own recipe book for a good, simple, basic corn muffin recipe, and this will be the one.

This was so much fun to make and the end result was awesome. My family complimented me that is tasted store-bought. I did take the advice and use Ghiradelli chips.

Cowboy Cookies III

I took SVROSS's tips for "unflattening" the cookies(reduced sugar, increased oven temp to 375 and 2 teaspoons of vanilla for flavour). I adjusted the recipe a bit after reading the reviews to lighten it just a tad because I was afraid I would eat a lot! I used one cup of all purpose white flour and one cup of King Arthur white whole wheat flour. I used 1/2 cup of butter and 1/4 cup of Sunsweet Lighter Bake (prune puree). I used 2 whole eggs because studies show yolks alone without the whites increase cholesterol, but not whole eggs. I used 3/4 cup of both sugars and after all that, I added 3/4 of shredded coconut. The cookies did not come out flat, but normal cookie shaped and sooo delicious!!!

Sesame Coffee Cake

Easy to make, very delicious and a nice change of pace. But extremely rich. I cut the oil in half and substituted 2 tablespoons of lighter bake and it was still quite rich. Nine servings is unrealistic, I would say maybe twice or three times that because all you can eat is a small sliver. That sliver is very good however.
