Sausage & White Bean Soup
I used a tube of sausage - the kind you would cut up to make sausage patties at breakfast. I also used three different kinds of beans: navy, great northern, and small white. I left out the thyme since I didn't manage to pick any up and I do miss the flavor of it. Other than that minor detail this is a really good soup. Nice textures and really great flavors.

Pine Nut Rice Soup
Really interesting flavor on this - I used chicken stock for the first run but I think I might try water for the second. I put my rice and pine nuts through the food processor since I'm currently sans blender and liked the texture of the final mix so I think I'll just stick with that. I shared with a friend who kind of likened the flavor to something close to oatmeal. I'm not sure I quite agree - this is subtley sweet in a way similar to oatmeal, but it's also something quite a bit different. I will definitely be enjoying this again!

Mincemeat III
This is fantastic! Wonderful taste! If you make it in a crock pot though, remember to cut down on the water a little, as mine came out just a little bit runny. That won't stop us from enjoying this great pie though! I strained all the canned items before including them. Once it was cured I baked it in a pie shell for 30 minutes at 350 F. Don't let the idea of canning scare you away from a good recipe. All you have to do to sterilize your jars is wash them in the dishwasher, then be sure not to touch the insides with anything that isn't sterile. There are a lot of good resources on the web that can help you.
