Sweet Potato Pie I
Made this pie for the first time, also ate it for the first itme. Excellent! I nuked the potato and scooped it out of the skin for more flavor. Used 1/2 cup light brown sugar, egg beaters instead of eggs, about 4 tablespoons butter, evaporated milk, and prebaked the crust for 5 minutes. Perfect!! Did sprinkle cinnamon on top for looks. Thanks for sharing this recipe. Will make this again, very soon!!! :-)
