These cookies are so good and so easy to make. I love that they don't call for shortening. I made 2 batches for refreshments at back to school night, and my students were so impressed! I was disappointed in one student's selfishness in eating 5! (but I guess that shows you how yummy they are!) The lesson is: make at least twice the amount called for!

This is Deee-licious! I made this for my birthday party and everyone loved it. If you like avocados, then you'll devour this! Definitely allow it time to sit and soak in the flavors.

I LOVE eating these cookies when they come right out of the oven. They taste heavenly! Don't worry though, they still taste great even when they cool down. These cookies always impress and delight, though they seem quite simple. Even those not normally fond of lemons have loved these yummy cookies. Excellent :)
