Filet Mignon with Rich Balsamic Glaze

These were to die for.. After letting them set out at room temp for about an hour, I seared the filets in a screaming hot cast iron skillet for abt 1 min per side, I did use a little evoo. covered the skillet , LOOSLY ( too prevent oven splatter) with foil and put in the oven for abt 5 minutes at 425, meanwhile, I made the balsamic glaze using the addition of a little sugar and garlic as suggested by others, melted the gorgonzola under the broiler for just a few seconds..so delicious..

Raspberry Sauce

I was looking for a sauce to puddle under a slice of cheesecake, so I didn't want a thick sauce,I eliminated the cornstarch, used Grand Marnier instead of OJ, 1/4 c white karo in addition to the sugar, and only 1/2 c water. Cooked over med low heat, stirring , for 10 minutes.. I strained the seeds out , it came out exactly the consistency I needed without that gloppy, cornstarchy consistency..

Raspberry Almond Coffeecake

Chocolate Chocolate Chip Cookies I

Yum, Yum, Yummy! I used 1/2 brn and 1/2 white organic sugars, and half shortening and half butter. Next time I will try using all butter, cause I had to flatten these out with the bottom of a glass dipped in water. They hardly spread out at all in the oven. Chocolatey deliciousness!

Raspberry Ice Cream

Ok, I admit that I changed this enough that it doesn't resemble the original.. But it turned out so great, that I would like to share my changes.. I did use 1C of sugar ( I used organic ) and 3C of heavy cream. I scalded these two, then added 2 beaten eggs, which I tempered first.I cooked ( but not boiled! ) it over low heat, stirring constantly, until it coated the back of a spoon, about 10 min.Then I added 1t. of vanilla. I pureed 3 C of fresh raspberries in a blender, and then pushed them through a sieve to remove most of the seeds. I added this to the cooled custard,and chilled it for 4 hours. I used my kitchenaid ice cream maker to freeze it..VERY creamy, like a frozen custard...and very yummy!

Fresh Berry Coffeecake

I cut this in half for just me my husband..the batter is thick, and obviously does not "pour" so I mixed the berries around with the batter in the pan and spread it to the edge.. I used lemon juice instead of milk for the glaze.. very tasty

Very Chocolate Ice Cream

This was a rich creamy chocolate ice cream,I read the other reviews, but I had no problems with grainy texture, I used a wire whisk and stirred almost the whole cooking and melting time. I tempered the eggs like the recipe states and used bakers german choc, and it still turned out awesome..

Creamy Vanilla Ice Cream

Very yummy... I had a vanilla bean I needed to use so I added the scrapped seeds to the cream, I used all half and half except for one 1/2 pint of whipping cream. After cooking and cooling the mixture, I added the vanilla bean pod and let it set for 24 hours before freezing using my kitchenaid ice cream attachment.. Awesome, and very creamy!!

Guinness® Corned Beef

Off the hook good! I rubbed the meat with the brown sugar and sprinkled the spices that came with it plus 1 bay leaf crumbled, 10 peppercorns, and 1t mustard seed over it and refrigerated it in the removable crock of my crockpot the night before cooking.Took it out and poured a whole pint of Guinness over it, cooked it for 9 hrs. on low, very very flavorful..

German Red Cabbage

Served this with corned beef instead of the traditional steamed cabbage, sooo much more flavor! Put the spices in a tea ball infuser,much easier to remove. The moisture cooked out almost completly, so no need for the cornstarch mixture..

Amazingly Easy Irish Soda Bread

Awesome! I used Irish butter instead of margarine,and formed into two small loaves, which I let rest after kneading for abt 10 minutes,They baked faster too, only took 40 min.I also added 1/2 c raisins. It has more of a scone or biscuit texture..very good with our St Patty's Day dinner!!

Boilermaker Tailgate Chili

I made this for super bowl Sunday, and it was a big hit, I made it leaner by cutting the meat back to 1# of ground beef, and 1/2# of Italian sausage. I also added 2T of chipotle peppers in adobo sauce for a smoky heat, and cut the chili powder back to 1 T. I used kidney, black, and chili beans. I made it the day before the game , and reheated in a big crockpot. It was a little thick, so I added two small cans of tomato juice to thin..I also omitted the green chiles and the bacon, did'nt miss them at all.Instead of bouillon, which is loaded with salt, I added a can of campbells french onion soup.We topped it with diced white onion, shredded cheddar, sour cream and fritos..Awesome!

Baked Alaska

I made my first baked alaska using this recipe as a baseline. I used vanilla bean ice cream, haagen daz chocolate ice cream, and HD rasberry sorbet softened, spreading one layer at a time in a medium tupperware bowl, freezing between layers. I baked 1/2 of Hersheys best choc cake recipe in a round layer cake pan that was the same size across as the tupperware bowl. I spread abt 1/4 c melted raspberry jam on the cooled cake and then put the cake, jam side down, on top of the frozen ice cream layers,smashing it in place with plastic wrap, and put it back in the freezer overnight. I made the meringue as the recipe reads, only I used 10 egg whites, unmolded my ice cream cake into a baking sheet covered with parchment( I covered the bowl for a few minutes with a warm damp towel to loosen) I covered the whole thing with the meringue, then back to the freezer for several hours. Right before serving, I put about 1/2 c of grand marnier in a metal gravy boat, ignited it with my kitchen torch, and poured it , flaming, over the alaska.It was a show stopper! I let it burn until all the alcohol was burned off, and finishd browning the meringue with my torch.. It took 3 days to make, but it was for my husbands birthday, so definitely worth the wait..

Spinach and Strawberry Salad

This salad was the hit of Easter dinner..Simple yet elegant and delicious! I sugared about 3/4 c pecans using 1/4 c white sugar and 2T water heated in a saucepan stirring constantly untill sugar melted and nuts were coated and dry, let them cool and sprinkled on top..Awesome, I will be making this as long as strawberries are in season!

Lemon Sauce I

I served this sauce with home made angel food cake and fresh berries for Easter dinner, it was perfect. I poured a puddle on the plate and laid the cake slice on top, then covered with berries.. Yummy, and low fat!
