Butternut Squash Soup

Very Good, I only added 1/2 of the cream cheese,I used low sodium chicken stock instead of water which is probably why it needed quite a bit of salt, I would say 1 teaspoon at least, I also added 1 tablespoon of tarragon vinegar right before serving. Would make a great first course for Thanksgiving dinner, Oh, I also used acorn instead of butternut squash...

Creamy Coconut Cake

I have been searching for a moist coconut cake for a long time, and I think this is it! Some I have tried are much more involved and don't turn out half as tasty as this..the cream of coconut is located in the drink mixer isle of the grocery store, coco lopez is the one I have had the best luck with. Chilling this cake well is key to the success of the recipe..

French Onion Soup Gratinee

This was a great FOS. I substituted 1/2 the butter with olive oil, and omitted the bread crouton to make it a little more lowfat. Topped it with grated swiss.. A great winters eve light supper!

Lady Baltimore Frosting

This is a great merinque frosting. Very fluffy and light. I let the egg whites come to room temp before I whipped them, and after adding the syrup, I beat them for about 10 minutes. Awesome!

Garlicky Baked Butternut Squash

I made this for Thanksgiving dinner and it was good, but needed a bit more seasoning, also the recipe didn't really say when to add the cheese so I mixed it in with the other ingredients and doubled the amount.

French Silk Chocolate Pie I

This pie is off the hook! I made it for Thanksgving day and it was the first dessert to go.I added 2T godiva chocolate liquor to fresh whipped cream. Awesome!

Beef Stroganoff III

Very tasty and great flavor, I used Golden Mushroom Soup instead of beef broth and omitted the mushrooms,because I dont like canned and didnt have fresh.I added the wine before simmering in my LeCreuset in a very low oven(250)for about 90 minutes. Used sirloin tip steak.

Lemon Sorbet

An awesome light summer dessert,I added a little less sugar and used club soda, which I increased by 1/4 c, served it with a simple rasberry sauce using 2 c fresh rasberries, 1/4 c sugar, 1/4 c water and 1 tablespoon of chambord, garnished with fresh mint leaves,very pretty presentation..

Poor Man's Caviar

A refreshing change from regular salsa. I changed it up a little by adding about 1/4 cup chopped cilantro, the juice of a lime, and 1/2 t dried red chiles instead of the hot pepper sauce..everyone loved, and there was none left at the end of the evening..a new favorite summertime treat!

Almond Wild Rice

Very tasty and lots of flavor.I added finely chopped celery and carrots, and exchanged the golden raisins for dried cranberries, as suggested by other reviewers..very colorful as well as flavorful. served it to guests with grilled shrimp.I will be making this again and again..

Penne, Tomato, and Mozzarella Salad

A little bland, but I liked the flavors together, next time I will use less pasta and more tomatoes and mozzarela. I used the marnated mozzarella and used twice as much as the recipe called for.A great summer dish.

Sangria! Sangria!

This was a huge hit for our fathers day barbeque.. I used rum instead of brandy and grand marnier instead of triple sec, I used a rose wine, and didnt put the fruit in until I served it.. I find it leaves a bitter taste if left in during the marinating process.. We have been on a quest for the perfect sangria, and this is the leading contender.

Barbequed Pork Ribs

Great ribs! I cooked them alot longer though, about 2.5 hours,and added a little pickling spice to the water as well. I added liquid smoke to the sauce, and some spices, it was a little vinegary for me, but still turned out well.

Corned Beef and Cabbage II

I made this for St Patty's day dinner, very yummy. The oranges give it a kind of fruity undertone. I used a cooking bag and lowered the temp to 275 for about 4 hours. I sliced the leftovers for Reubens the next day, great!

Coconut Ice Cream

Apple Dumplings I

Very yummy! I used 1/2 brown and 1/2 white sugar, as was suggested by other reviewers. I also used Phyllo dough instead of biscuits,with gala apples tossed in cinnamon sugar,cooked the sauce on the stove and added it the last 10 minutes of cooking time. It made a great late Sunday morning breakfast with a little whipped cream and hot coffee..

Tommy's Ham Casserole

This recipe was a great way to use leftover Easter ham. I didn't have cream of mushroom, so I used cream of chicken soup. I also added about two tablespoons of melted butter to the bread crumbs.I will use this recipe again!
