About this Cook
VERY happily married, 18 year old daughter at School of Visual Arts in N.Y. Have dreamed forever of living in Mexico. My Spanish is getting better everyday. Though my profile says I now live in Xcalak, I don't yet but hope to be moving there within 2009. Figure saying it's true will really make it true!! We travel quite a bit, mainly now throughout Mexico and Central & S. America. We spent several weeks sailing around the S.Pacific, mainly the islands of Vanuatu and I am in love with the water, beaches. We live surrounded by water in New Orleans, but it's not the same. We lost our house in Katrina, now been living for three years in an old, outdated house trailer, but plan to use the money we've saved to make the lives we've always wanted!!
My favorite things to cook
I love all types of Caribbean and Mexican cuisine and will try any worthy recipe I can get my hands on. I dream of one day opening a little restaurant in Xcalak or some other small area on the Yucatan.
My favorite family cooking traditions
Grew up in an Italian family, and there were no great adventures amongst the cooking in my family. But after marrying my husband five years ago, and with traveling so much, my horizons were broadened beyond my wildest dreams.
My cooking triumphs
My first authentic Mexican Roast Pork (from Gourmet Magazine, Sept.'07). I thought it would be another disaster, but got rave reviews! My husband fishes a lot, so we cook up all kinds of ways to fix fish.
My cooking tragedies
Pompano in banana leaves! Waste of a beautiful fish. What was I thinking?! Unfortunately, more cooking tragedies than triumphs, but that's how you learn, right?

Spanish Rice II
Great basic recipe! Terrific as is, or as a starter for all kinds of little tweaks. Reviews by others are extremely helpful. I used basmati rice, rinsed well to remove starch, browned it in olive oil, used chicken broth instead of water, Rotel tomatoes, minced garlic. Have once tried putting in some black beans toward the end of cooking. It's great to have something different to serve with enchiladas, or with many other wonderful S.Western/Mexican recipes on this site.

Clone of a Cinnabon
I used this recipe to make Monkey Bread. OMG! It came out awesome. ONly problem is family/friends are wearing me out with requests for "more,more,more...!"

Chunky Crawfish Spread
terrific! Such a good way to use up the extra crawfish. Makes good little hor-deurves, roll up in puff pastry or phyllo and bake for a few minutes. Delish! Thanks for this one!
