About this Cook
VERY happily married, 18 year old daughter at School of Visual Arts in N.Y. Have dreamed forever of living in Mexico. My Spanish is getting better everyday. Though my profile says I now live in Xcalak, I don't yet but hope to be moving there within 2009. Figure saying it's true will really make it true!! We travel quite a bit, mainly now throughout Mexico and Central & S. America. We spent several weeks sailing around the S.Pacific, mainly the islands of Vanuatu and I am in love with the water, beaches. We live surrounded by water in New Orleans, but it's not the same. We lost our house in Katrina, now been living for three years in an old, outdated house trailer, but plan to use the money we've saved to make the lives we've always wanted!!
My favorite things to cook
I love all types of Caribbean and Mexican cuisine and will try any worthy recipe I can get my hands on. I dream of one day opening a little restaurant in Xcalak or some other small area on the Yucatan.
My favorite family cooking traditions
Grew up in an Italian family, and there were no great adventures amongst the cooking in my family. But after marrying my husband five years ago, and with traveling so much, my horizons were broadened beyond my wildest dreams.
My cooking triumphs
My first authentic Mexican Roast Pork (from Gourmet Magazine, Sept.'07). I thought it would be another disaster, but got rave reviews! My husband fishes a lot, so we cook up all kinds of ways to fix fish.
My cooking tragedies
Pompano in banana leaves! Waste of a beautiful fish. What was I thinking?! Unfortunately, more cooking tragedies than triumphs, but that's how you learn, right?

Graham Cracker Crust
Great go-to recipe. thanks! Just a suggestion to try: I mixed all ingredients together then refrigerated for about 20 minutes, and that made it easier to handle the crust and keep it "up" along the sides neatly

LuvAnn's Guacamole
Awesome! Halved the recipe to use in a small 7-layer dip. Only complaint was DH whining, "Did you have to use ALL the guacamole in the dip?" Had to make another batch just for him once the rest of the avacados were ripe. Thanks LuvAnn!!

Seven Layer Taco Dip
DH loved this (me too)! I also used LuvAnn's Guacamole recipe as a layer, didn't have canned black olives. Also used Ducal brand refried black beans. Sinful, but Oh So Smoooooth! i pick up a couple of cans when visit the Latino market.
