Tasty Lentil Tacos

Great recipe! My husband didn't realize he was eating lentils. He wasn't confused enough to think it was meat, but he was shocked he liked it. I needed more stock because mine dried out while cooking. I also couldn't really get them to mash, after 35 minutes. Still, they were tasty!

Pumpkin Spice Muffins

I liked these, but they don't seem to have much of a shelf life. They started to taste funny and the texture changed by day 3, even though they were wrapped air tight. My son didn't care for them at all.
