About this Cook
Not a chef by any means, but gotta get meals on the table for my family. That's why I love this site.
My favorite things to cook
Barbeque, things on the grill, things in the crockpot that are not your typical 'cream of' or don't involve onion soup mix. Anything that will get me compliments from my two boys and husband!
My favorite family cooking traditions
We lived in Greece for a year when I was little, and we still love those Greek dishes and mediterranean flavors.
My cooking triumphs
The pita bread off this site. It's like magic and so delicious!
My cooking tragedies
One of the first things I ever cooked--a birthday cake from a mix for my dad. I accidently put the oven on "broil." Obviously, it turned into a raw, runny cake that was totally black and burned on top. Thankfully, I kept trying my hand at cooking after that. Another big tragedy--making beef stroganoff with yogurt instead of sour cream. Only thing was, I accidently used vanilla (very sweet) instead of plain. Gross!!

Get a Husband Brunswick Stew
They say 5 stars means "the best" and this IS the best Brunswick stew I've eaten or made. The different meats give it a really good flavor so definitely use the ground pork if you can. I used leftover turkey rather than chicken (can't wait to use leftover smoked turkey). You don't have to shred it as it shreds while it cooks. I only used half a pound of each ground meat as prior reviews said it was too meaty. I used diced tomatoes so I wouldn't have to chop the whole tomatoes. I added some liquid smoke because most Brunswick stews used smoked meats. I used only 2 cans of creamed corn. I added half a bag of frozen lima beans. Do not overdo the bbq sauce, use just the 1/2 cup stated. I did the green pepper as stated but I wonder why you can't just chop it and sautee with the onion & celery?? I think small cubes of potato would be good in this but wanted to try it without first. We ate this with cornbread and it was a great meal!

Veal Scallopini
Really good. I made with chicken pounded to about 1/2 inch thick. Added garlic powder, lemon pepper, herbs and parmesan cheese to flour. Added a squeeze of lemon juice and capers to final dish. DELICIOUS!

Risotto with Asparagus
My first time making risotto and a few observations: It took a long time. I had to add 2+ additional cups of broth because the rice still had a crunch after the original amount. Stop when it's a little more liquidy than you want because it sets up as you are getting everything on the table (so mine was a little thick). I added the garlic and rosemary as others suggested. Everyone really liked it! But it is WAY to salty even though I used low-soduim broth. Too salty in taste and the next morning my fingers were swollen. If anyone has any suggestions, because I would love to make this again... Is there a no-salt broth? Can you use water for some of the broth?
