Homesteader Cornbread

This is THE BEST cornbread recipe. The only thing I did differently was follow another reviewer's suggestion and beat the mixture for 4 or 5 minutes with my hand mixer. I've made this twice in just over a week, and both times the hubby has raved about it. Thanks for a great recipe!

Easy Microwave Chocolate Cake

Terrific. The chocolate craving hit, and this fit the bill perfectly. I followed others suggestions and made it a bit sweeter, then while it was warm, I glazed it with a mix of Hershey's chocolate syrup and powdered sugar - about 2 Tbsp. each. Yum. This is definitely a keeper.

Butter-Dipped Biscuit Squares

I've made a form of this recipe for years. I'd forgotten about them, then rediscovered here. Love 'em. Yes, baking them in the butter is a lot of butter, but these are probably the easiest biscuits I've ever made. Addition: I used to enhance these with some garlic powder and Parmesan cheese on top just before baking.

Beer Bread I

Great, easy recipe. I've tried 2 different beers - bud light and american ale. I think the lighter taste of bud light is more appealing to us, since my husband isn't a beer drinker. Overall, though a very good recipe.

The Best Chicken Fried Steak

Very good crust. I pounded the round steak very thin so it would cook quicker. Didn't use as much oil as called for, so I turned the meat one time. Maybe I didn't have enough meat, but I had way too much milk batter and flour left over. I sifted the leftover flour into the oil for the gravy. Since it was already somewhat seasoned, I used less seasoning in the actual gravy. Will make again.

Pancakes

I'm giving this three stars because I made my own 'self-rising' flour. As far as taste and rise, they were only 1 star. The pancakes were flat. No rise at all. I ended up having to add about 1 1/2 tsp. more baking powder to get a decent lift.

Oil Pie Crust

I'm not thrilled with this recipe. I may try it again and see if I get better results. I measured everything exactly, and I couldn't get it to hold together. Tastes good, but doesn't look good.

Cherry Tomato Corn Salad

Really liked this. I tweaked it a bit: I used lemon juice since I didn't have any lime. Added very finely diced vidalia-type onion, didn't have any cucumbers. This is definitely a keeper.

Fluffy Canadian Pancakes

Chili Sauce

I'm not familiar with chili sauce, but the Baha Mama Chops recipe called for it, so I tried this recipe. It worked really well, and I'll make it again. I added some rice wine vinegar, and really liked the extra sweetness.

Bahama-Mama Pork Chops

Very good! I had to make a slight change since I didn't have any pineapple. I used mandarin oranges instead, and added some extra rice wine vinegar. Also used the chili sauce recipe from this site. I doubled the sauce, as was suggested by other reviews, now I have enough pork and sauce left over to serve a second meal! That's always a good thing!

Basil Butter

Love it! I'm always looking for ways to use my abundant basil, and this was wonderful. I used unsalted butter, then added salt to taste. Would have been great even without the salt.

Cherry Chocolate Cake

Great recipe! I did make a few small changes, but hubby and I both loved it. I made a half recipe in an 8 x 8 pan. I added about 2/3 of a can of the cherry pie filling. As I served it, I sprinkled powdered sugar over the top, and added another spoonful of the cherries. Yum. This recipe was easy to put together and will be a regular in our house.

Quick Gnocchi

Just got done with supper. Husband loved them. Made a couple of changes. I'm restricting my sodium, so I replaced the salt and pepper with Ms. Dash Garlic and Herb. After they boiled, I pan-fried them in a skillet with unsalted butter and garlic powder. The crispier they were, the better we liked them. A good basic recipe to expand on.

Strawberries in Spiced Syrup

This just didn't work for us. Husband thought it tasted like cough syrup. I boiled it for 12 minutes, and sugar still remained crystalized.
