My new husband and I (est. 6.20.09) both love to cook. But between two full time jobs, long commutes and an old Vermont home that has to be babied along until we can dive into the remodel, we both struggle to find the time or the energy. During the week, it is more about survival than enjoyment - the struggle to come up with something when you're tired and hungry is insane! Luckily, with some help from Allrecipes and some clever thought on my part, I realized that spending 30 minutes meal-planning the Sunday before the long workweek is the way to go. When we're not cooking, working, or spending time on home updates we love playing with our dog Bella and our cat Kodi, gardening, skiing, and hiking.
My favorite things to cook
I love to cook chicken chili because it is just SO good. Also chicken marsala (from Allrecipes) as it is SUCH an easy recipe and always turns out fabulous.
My cooking triumphs
Lately I created the perfect meatball! Mine had always turned out dry and flavorless so I was pretty psyched. :)
My cooking tragedies
I struggle to have success with my breadmaker. Argh!

Sesame Pasta Chicken Salad
A wonderful salad for a nice summer evening! I added additional vegetables (chopped tomatoes, diced carrots, etc) and could have easily left out the chicken if I wanted to make this even quicker. Perfect!

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze
I made this for dinner a few nights ago - it was quite easy and absolutely delicious! Our grill is put away for the winter so I pan fried it to brown the exterior of the pork and baked it for about 20 minutes at 350 F. YUM!

Pork Tenderloin with Dijon Marsala Sauce
This was SO good! I used light cream as it was what I had on hand and wanted to cut down on the fat content. I also wisked in a couple tablespoons of light sour cream for a little extra bite. Definitely worth saving and sharing! Thanks!
