Cookie Pops

This is a very yummy recipe. It has become a tradition for me to bring these cookie pops to the end of the year picnic at the nursery school where I work. At first, I had a bit of a problem with the cookies being flimsy and falling off the stick. I added 1/2 cup extra of flour and this helped. I also used wide wooden craft sticks instead of lollypop sticks. They look great wrapped in colored cellophane and tied with curling ribbon. Very festive and delicious treat!

Maids of Honor Tarts I

I needed to bake something for my son's Elizabethan social studies class project. We found a reference that these tarts were named for the maids of honour of Queen Elizabeth I. These tarts were delicious and a big hit with the kids and teacher in my son's class. I used mini-muffin tins, kept the oven rack at the regular position, and had good results using 10-12 minutes baking time. Also, since I used the mini-muffin tins, I reduced the amount of jam in each tart, probably to about 1/4 teaspoon. Wonderful taste and yummy combination!

Old Fashioned Fudge Cookies

I rolled the cookie dough into 1" balls and then rolled the balls in granulated sugar. After baking them, I gently flattened each cookie by placing a candy kiss on top. The combination of the chocolate kiss and the chocolate cookie was yummy! These looked nice on my cookie tray along with the traditional Peanut Blossom cookies. I can't wait to try this with the new mint-flavored chocolate kisses!

Grammy Burnham's Molasses Cookies

Everyone loved these cookies! The first time I made this, I found the dough to be a bit soft, so I refrigerated it overnight. The next day, I made the dough into walnut-sized balls and rolled them in granulated sugar, as someone else suggested. Wonderful, and even better the second day!

Lemon Cooler Cream Cake

Microwave Spiced Nuts

This was quick, easy, and yummy! I needed a quick Easter gift for my daughter's nursery school teachers. I made this nut mix, combined it with pastel malted milk Easter egg candies, and packaged it in pretty cellophane bags with ribbons. Great!
