My husband and I have parties on a regular basis for 20+ people. It is important to me to be able to make good food, on a budget, doesn't take a lot of time. Our friends have many dietary restrictions so I always make sure there is something for everyone.
My favorite things to cook
Anything my family will like. I prefer easy recipes, but I do occasionally pull out the WOW recipe, just because. :)
My favorite family cooking traditions
Spending time with the family in the kitchen so it becomes second nature to know what to do. My grandbaby is 4 and she can already crack an egg with the best of them. Cooking should be like breathing, and be there without thought.

Everytime a loved one smiles at me over their plate.
My cooking tragedies
I was the worst cook on record when I got married. My first Thanksgiving was a disaster. The turkey was undercooked, the gravy was green. Thank goodness my ex liked gin. :)

Joey's Peanut Butter Cookies
I made these with my grandbaby today. It was easiest to make a double batch. I used an 18 ounce jar of pb so I didn't have to measure. We rolled the cookies in colored sugar and flattened slightly before baking. They were very good on a silpat, 375 for 12 minutes.

Caramels
This is a fabulous recipe. I make a double batch. It does boil up quite a bit. I use a dutch oven, put everything together except for the quart of cream. Start it bubbling, then add the cream little at a time, so it doesn't boil over. After I get all of the cream in there I boil it to 220/224 degrees. DO NOT cook this to 250 or you will end up with Werthers type candy, like I did on the first batch. Not bad, but not chewy. It is easier to make a double batch as long as you plan so it doesn't boil over. This takes me almost an hour to make, it takes some time so put in a video and plan on stirring. You won't want the heat too high or it will pop on your hands. Ouch! It makes a lovely gift.

Chicken Tortilla Soup II
This is a great recipe. I cook the cut into bite sized chicken (I use boneless, skinless thighs) in the pan with garlic, season salt and pepper. Then I add my onions and sauté them with the chicken. I add all of the other ingredients and heat through. I like to add two cans of black beans that have been rinsed as someone else suggested and I don’t add tortillas. I then serve the soup with tortilla chips that you crunch into the bottom of your bowl and top with shredded cheese and sour cream, if you want. It is a very healthy recipe without those additions but they are good! This is wonderful. Play with it and enjoy!
