About this Cook
I am a stay at home mother of 4. My husband farms. I got my degree in culinary arts from college and have been interested in food for years. Even though I went to school for cooking, I'm always challenged to find something that my kids like to eat. They are my biggest critics.
My favorite things to cook
My family enjoys my italian dishes served with foccicia. I enjoy trying to make things from scratch, ie homemade tortilla shells, pasta, breads etc. lately I have been trying to find low cal, low fat dishes that still taste good. After the 4 kids I could stand to lose some lbs. But I want to still enjoy cooking. None of these frozen dinners for us.
My favorite family cooking traditions
Homemade spaghetti with meat sauce. This is the birthday meal all the kids ask for. If they have been extra good we will make our own pasta. We all enjoy homemade bread fresh out of the oven. For Christmas the kids take homemade cinnamon rolls for their teachers.
My cooking triumphs
Working hard and having the whole family enjoy a meal that I planned especially for them.
My cooking tragedies
I have plenty of them too many of them to submit. I think that is what makes you better, you learn what to do different next time.

Grilled Bacon Jalapeno Wraps
We have been making these for years. The one thing that we do different is mix equal parts cream cheese and shredded cheddar to stuff them. We have also frozen them and used them when we are grilling in the winter. They work great! Just pull them out when you light the grill and they are ready to go when the grill is hot.

Microwave Popcorn
This is my new favorite snack. I found that it took 2 minutes to cook mine, all microwaves are different. At 2 minutes there are quite a few kernels left unpoped but any longer and the corn burns. You just have to adjust to your microwave. It beats the boughten kind hands down!!! We add garlic salt or lawreys seasoned salt to ours. A great use for those 200+ lunch sacks that I had to buy for 1 or 2 being used. Great recipe! I always love to find the homemade way to do something.

Big Soft Ginger Cookies
These are the BEST ginger cookies I have ever made. I used to have to travel 80 miles to a bakery to get something close to these. Even my 4 kids love these with a little icing on the top. These are in my recipe box for good.
