Syracuse Salt Potatoes
A blast from the past. Such a delicious and simple side dish. You can throw in some fresh dill or parsley etc for looks, but these are so tasty they really don't need anything else. These are best served the same day...they lose some of their flavor as leftovers the next day.

Balsamic Roasted Red Potatoes
These were good, but I was expecting a little bit more. I love balsamic vinegar - I ended up adding a little bit extra because I just couldn't taste it enough. But, this was still missing something. After a couple more bites I figured it out...and tossed in some freshly grated PARMESAN cheese. It added just the right touch and was a perfect fit with the other flavors in the dish. Thanks.

Zesty Corn Chowder
Delicious. I lightly browned 4 chicken breasts (first seasoned w/ salt & pepper) and shredded them before adding to the chowder. I love the chunks of potato from the soup (I used Campbells brand) I tasted it as written, then added a sprinkle of chili powder & cumin and topped with just a pinch of some finely chopped cilantro. This was really good and so easy (and quick) to make. My 3 y.o. even liked this. You can easily adjust the spiciness to your liking. Thanks.
