The Best Meatballs
I roughly made one third the recipe it's just two of us. Just used ground beef and made it pretty much as written except I had dried parsley. It was quite delicious and very tender and moist. I think the trick is not to over cook the meatballs because they continue to cook in the sauce and the sauce moistens them. I coated a non-stick fry pan with olive oil and just cooked them over medium heat turning them once really, there was no sticking I'm guessing it's because I used nonstick and beef with 15% fat too lean beef will not be good in this recipe. I used Bertoli sauce which is sweet but very good. We inhaled our dinner, thanks.

Mediterranean Chicken with Eggplant
This was surprisingly good for so few ingredients but definitely marinate your chicken beforehand I didnt and it was bland, but the sauce helped. I added 2 grated garlic cloves, chicken broth instead of water, increased the tomato paste to make more sauce. and layered with skim ricotta which melted and was awesome. I also used fresh oregano. I too sweated the eggplant, rinsed and pan grilled using a cooking spray in non stick pan. My husband did not complain and even ate his eggplant which he usually leaves on the plate.

Hurricane's Chicken Casserole
I made this tonight and my husband told me to add it to my favorite recipes and to make it often. To be honest he loved it more than I did, to me it was ok it didn't have the wow factor, but hey its not that difficult to make and if it pleased the hubby I will make it often. I think it needs maybe some small apple chunks added to the stuffing or the chicken mixture that might round out the flavor. I did however saute a small onion and chopped carrots and one clove garlic in a bit of olive oil and added to the soups (lowfat) and chicken along with some green beans, no peas and no french onion. This might be a perfect dish to freeze.
