Grilled Pork Chops with Balsamic Caramelized Pears

This was very delicious, and I was happy to find a different use for pears. Next time, I will let the chops rest in the brine for longer, and throw the pears in a few minutes after the onion - they came out a little too soft. Thanks for the great recipe!

Prize Winning Baby Back Ribs

This is so delicious! I used this recipe on thick bone-in pork chops and barbecued them for about 15 minutes. I smothered the chops in bbq sauce and transferred them to a 170 degree oven for another hour. They were extremely tender and tasty! I keep a shaker bottle of this spice mix in my pantry now!

Jalapeno Steak

I loved this marinade! I added a few slices of onion to the mix, used a 1 1/2 lb london broil, and let it sit overnight. I cooked it in a cast-iron grill pan on the stove. I used the meat in a soft taco shell with sour cream and cheese - yum! I had another 1/2 left over that I let marinate for another 24 hours - the flavor was much stronger and better! I sliced this piece up over a salad.

Spinach Stuffed Chicken Breasts

This was a really nice change for dinner. I used mozzarella cheese instead of feta - allergy - and blue cheese wasn't an option because the bf doesn't like it. I added diced red onion, salt, and pepper. I thought it could use a lot more spinach, and maybe sour cream instead of mayo. Overall, it was good, but I'll be changing a few things next time I make it!

Blueberry Crumb Pie

This was very tasty. I've used the same struesel topping recipe since I was a kid! I added 1 tbsp of cornstarch too, because there's nothing worse than a runny pie to me! I only used 2 pints of blueberries, so I probably should've reduced the flour and sugar mix as well. Since I forgot to, the blueberries had a little extra gooey-ness to them. It was still a great recipe and I'll be using it again!

Beer Batter Fish Made Great

I chose this recipe because my boxed beer batter mix was too low for dinner. I was happy that it stuck to the fish nicely and browned up well. But when the fish was served, the batter would come off easily, and it definitely had more of a flour-y taste... not so tasty with fish. Next time, I will use a recipe that requires cornmeal instead. But thanks anyway!

Island Kielbasa in a Slow Cooker

I loved this! I was in the mood for something exotic, and this was perfect! I made quite a few modifications, though: I halved the recipe, used 1/2 cup chili sauce, 1/2 cup ketchup, 1/3 cup brown sugar, 1/2 can pineapple, and added red onion, a few drops of hot sauce, ground ginger, cumin, salt, and pepper. I feel bad that I altered it so much, but it needed some spices! I cooked it in a large pot on the oven for about 30 minutes, and served it over rice.

Baked Bar-be-que Chicken

Very tasty! I cut the time by cooking the chicken in a skillet with olive oil, cracked red pepper, paprika, and garlic for about 15 minutes. Then I transferred it to the oven for 45 minutes. Definitely a keeper!

Cajun Red Snapper

This is a great recipe! I had a premade Cajun seasoning with the spices the recipe lists, so I used that on the snapper. I do not have a cast iron skillet, so I baked them on a broiler pan in the oven with plenty of butter and some lemon juice. I baked the fish at 350 degrees for about 20 minutes. I will definitely make this again and again!
