Chicken Texas Style
This chicken was excellent for us...and even the kids. I took all the seeds out of the jalapenos except for one so it wouldn't be too spicy. Only problem: The bacon turned out soggy, so I broiled both top and bottom, but the sides were soggy. Maybe next time I'll try to cook the bacon a bit first OR maybe not even roll up the chicken and just put everything on top of the chicken, then broil...the bacon will be more evenly cooked. The combination of all the flavors was great. I definitely recommend it...don't be afraid of the jalapenos if you don't like it spicy...just take out most seeds.

Alice Chicken
My five children and husband all loved this chicken and that is something hard to come by!! Don't leave out the honey mustard dressing, it gives the dish all the taste!!! GREAT

Mandarin Almond Salad
I brought this salad to Easter dinner. My mother grandmother who are wonderful cooks loved the salad. My sister, who is always honest, told me she loved it and wouldn't change a thing. I, on the other hand, thought the dressing need a little something. Maybe the olive oil gave it a little bitterness? I had leftovers and added raspberry vinagrette to the dressing and I enjoyed the salad a lot better! I would make it again. The almonds made the salad.
