Mom's Chicken Cacciatore
I was very happy with this recipe. My changes: more onion, bell pepper, wine & tomatoes (a couple of short bursts in the food processor first) than the recipe called for, then simmered for a few hours to reduce the extra liquid added - which made the chicken wonderfully tender too. Served it with mashed potatoes the way I have had it in an italian family-style restaurant.

Insanely Easy Vegetarian Chili
For color and variety I add a couple of cans of different beans - chickpea, garbanzo, red kidney, etc. I usually skip the mushrooms for personal preference, but otherwise stick to this recipe. I would never have imagined that I would prefer veggie chili over a traditional con carne, but I think this recipe has converted me!

Definitely put the bananas under the caramel. Also on top of the whipped cream you can sprinkle finely grated chocolate, or instant coffee granules and cocoa. The first time I had it in England, it came with the coffee dusting, and that's the way I'll always remember it best.
