About this Cook
I'm a mother of 3 girls. I love to cook and experiment with food. I'm challenged by my picky husband but I still enjoy the challenge.
My favorite things to cook
Hmmm...all sorts of things. Usually I am inspired by seasonal things, I get whims, and sometimes my husband requests stuff.
My favorite family cooking traditions
Don't have any yet but with a 4 year old, I'm sure they will develop. Right now it looks like we will do cut cookies periodically, she loves to cut cookies.
My cooking triumphs
Well, lets see. I love to make pies. My husband's family enjoys my bread machine rolls and hash brown casserole. I make a mean honey cranberry sauce and sweet potato casserole.
My cooking tragedies
When I set my stove on fire making cranberry sauce.

Enchilada Casserole III
This recipe is AWESOME!!! I used suggestions from other users and added diced tomato. I also used fajita seasoning instead of taco seasoning (my husband's preference). Everyone ate it, even my picky oldest daughter. It made 2 whole casseroles, and there is enough left over from tonight for another meal. Thank you so much!!!

Chicken Casserole Mississippi
I used cream of celery soup instead of cream of mushroom and seasoned the chicken with Adobo while it was cooking (I only used a pound of chicken). I also threw in some frozen peas and carrots. This was a yummy recipe.

Chicken Enchiladas II
This recipe was so good!! My husband does not like onions in any form so I had to leave that off. I also defrosted/marinated one pound of chicken in Fajita mix all day while I was at work cutting up the raw chicken when I got home and letting it sit for an additional hour before cooking. It turned out SO go!!!
