Dee's Roast Pork for Tacos
Made this in my crock pot. It was wonderful. I grew up in Arizona and we had real Mexican food there, this is the closest I have found. All we use for tacos is onions and fresh cilantro. It even worked great as a taco salad.

Mom's Zucchini Bread
The only complaint is it had lots of hard bits of the peel in the bread, maybe if you peel the zucchini before you grate it the hard bits can be avoided. I read a lot of the reviews before making this since it was my 1st time trying it. Overall the bread came out good I did the 1/2 brown and 1/2 white sugar, less oil and used cinnamon applesauce, 3 cups of zucchini and I also added chocolate chips to 1 loaf.

Mrs. Sigg's Snickerdoodles
I made mini cookies, when cooked they were about the size of a 50 cent piece. My kids rolled them in the cinnamon/sugar mixture and placed them on the cookie sheets. I needed to shorten the cooking time so they didn't get to hard. I had to make a double batch just to have some to bring into work because the kids ate them as soon as they were cool enough. To make them soft again after fully cooling I put some in the microwave for about 15 seconds or so and they are just like when they came out of the oven.
