About this Cook
I have been married since 2003 and cooking for yourself and cooking for yourself AND another person are very different things. It's been a challenge incorporating what I like and what he likes in each and every meal but I've mastered it! AND on a tight budget to boot!! Even though there is only 2 of us, I make a lot for dinner and we always have leftovers for lunch the next day.
My favorite things to cook
Sadly, I love cooking anything with carbs in it. Mainly pasta and potato dishes. My mouth is watering just thinking about it! My very favourite recipe in the universe is Rachel Ray's Sundried-Tomato Pesto. I always say, if I end up on death row, that will be my last meal! I, however am NOT good at baking. Actually, that's a lie. I can make cakes, cookies and simple things like that but heaven help me if you ask me to make you a pie or any type of pastry!
My favorite family cooking traditions
Cabbage Rolls, Cabbage Rolls, Cabbage Rolls!! My Grandmother had a fabulous recipe, my Mother has her own recipe and I've created my own recipe. All, I must say are fantastic and a staple at Thanksgiving and Christmas!
My cooking triumphs
Any time my Mother asks me for a recipe, I consider it a triumph. It's very hard to top her cooking because she's been there, done that and made it extremely tasty along the way!
My cooking tragedies
Ah my very first batch of chocolate chip cookies. I was very ambitious one day as a wee girl and decided to bake for the first time ever. All went well and they came out of the oven looking fantastic! Yet, when my poor mother tried the very first one, she gagged and ran for the water. Sadly, somehow I put in a cup of salt instead of sugar.

Peanut Butter and Banana French Toast
Yum! I made mine with whole wheat bread and it was great! My 2 year old inhaled hers, which was great!

Butternut Squash Fries
My 2 year old inhaled these! I put them under the broiler for a few minutes at the end to crisp them up a bit. I think no matter what you do they'll always be a little soft but they're delish and good for you!

Ranch Dressing II
This is so great! I change the ingredients to 4 servings and it gives me all of the measurements that go perfectly with a can of tuna and some diced pickles. Add to fresh bread and voila! Tuna sandwich!
