About this Cook
I've been married for 20+ years and have 2 teenagers. I didn't cook much as a child so it was kind of trial by fire when I got married. Luckily my husband survived and over the years I think I've improved a lot.
My favorite things to cook
I really love making things in the crock-pot and casseroles. Appetizers are fun also. Desserts I'm not the greatest at but still will make them occasionally.
My favorite family cooking traditions
Making a ton of cookies at Christmas time. Also making a lot of appetizers and snacky things on new years eve. We have a large extended family that really enjoys potlucks and family get togethers with food. On my moms side, we are Norwegian so we have lefse at Christmas. We don't have it the way normal people eat it (cinnamon and sugar) but we spread on butter, mayo then put slices of turkey, stuffing and cranberries and roll it up like a burrito. It is to die for!
My cooking triumphs
finally being able to make fried chicken like my mother in law (kinda sorta). She makes the best and has been for years and years and although mine isn't quite as good, at least passes somewhat.
My cooking tragedies
When we were first married, I tried a recipe out on my husband. I thought it would be more healthy and good for us to eat fish but didn't have a clue how to make it. I found a recipe in one of my books called "Sweet and Sour Fish" where you took cubed fish, put a batter on it then served it with some kind of sweet and sour sauce. The result was horrid. My darling hubby tried so hard to eat it and tell me how good it was but really we both knew it was awful. I've never attempted fish cooked that way again.

Cayenne Pretzels
I had one of those large bags of pretzels from Costco and was looking for something yummy to do with them. This was the perfect idea! I agree that it is too much oil, but I compensated by just adding more pretzels until I thought it was just right. Ended up having 4 trays of them in the oven. Everyone loved them and have asked me to make more. Thanks for the recipe!

Overnight Apple Cinnamon French Toast
Made this for Superbowl Sunday Brunch and everyone LOVED it. Only switch I made was using the thick texas toast bread instead of french. I am wishing I had a deeper dish though because it bubbled out and over into my oven. (it needed cleaning anyway!) Thanks for the yummy recipe!

Almond Biscotti
Made these for Christmas and everyone loved them. I was worried that they might be hard to make but they were anything BUT! They came out just like the kind you can buy at a latte stand. I even half dipped some of them in chocolate and white chocolate and they were SO wonderful dipped in coffee! If you've never made them then try this recipe.
