About this Cook
I am a writer, editor and proofreader who has been self-employed since 2001. Cooking is one of my favorite pasttimes!
My favorite things to cook
I'm better at complete meals and appetizers than desserts. Some of my specialties are chicken parmiagiana, macaroni and cheese, cheese puffs, spanakopita, and sweet potato pie.
My favorite family cooking traditions
Every Christmas we bake lemon pound cakes, nut-and-raisin pound cakes, sweet potato and coconut pies. :) My grandfather was the one who primarily taught me to cook. He taught me to bake cakes, pies , and banana pudding from scratch. He also taught me little tricks like how to make gravy from scratch, and from him I learned to appreciate fresh vegetables from the garden (and how to grow them!).
My cooking triumphs
I learned to make curry chicken and made a shortcut lasagna (used frozen ravioli instead of lasagna noodles) that turned out great! I also made cornbread from scratch (I used a recipe from Food + Wine magazine, with much success) and cole slaw from scratch.
My cooking tragedies
I tried to bake bread from scratch, but the bread came out hard as a rock (maybe I had a bad batch of yeast?). I also tried to make a rum cake, but it didn't rise properly.

Banana Bread VI
The recipe turned out okay, although I read the reviews before cooking and made some of the suggested tweaks to the recipe: --added 1/2 c. milk, 1/2 stick salted butter, cinnamon --omitted salt and nuts (I don't like nuts in my bread) I actually used pastry/bread flour instead of all-purpose flour. The bread turned out moist and not too sweet, yet dense. I made 4 mini-loaves instead of one large loaf, and it still turned out fine.

Mom's Yeast Rolls
I concur with most of the reviews written. This was my first time trying this recipe, and baking yeast rolls. I followed the directions to the letter, and the dough didn't rise. It was gooey. I didn't add any extra flour or yeast. The rolls didn't rise when I went ahead and baked them, either. They looked more like scones or biscuits than "light, fluffy" rolls. When I think light and fluffy, I think of rolls found in places like Golden Corral. I, too, may search for another yeast roll recipe.
