Peanut Butter Chip Chocolate Cookies

Wonderful recipe, thanks!! I was skeptical, but they turned out great on the first try, even with half of the butter substituted with Earth Balance. Baked for 9 minutes, they come out tender and slightly chewy on the edges. The peanut butter chips are a pleasant surprise with such a chocolatey cookie. Yum.

Janet's Rich Banana Bread

The most moist and delicious banana bread I've ever made. Turns out great with greek yogurt instead of sour cream. And i do mash the bananas, don't slice them. Topped the loaf with cinnamon sugar before baking. Always a hit!

Zucchini-Chocolate Chip Muffins

Banana Bran Muffins

I also modified it a little - used Earth Balance instead of butter, wheat flour instead of all purpose, and cut down a little on the brown sugar, and threw in a few chopped dates instead. I must have tripled the amount of walnuts, and they are SUPERB. Moist and buttery... Yum!! Thank you :)

Stuffed Peppers

Not bad. I appreciated the suggestions to cut down cooking time, and using spicy Italian sausage gave it a little kick. It has more of a Mexican flavor thanks to the chili powder, so I almost wished I had used chorizo instead. I also agree that this could be great in burritos!

My Kid's Favorite Pork Chops

I divided the recipe in half, and used thick-cut pork loin chops (perhaps this was a mistake). After 2 hours of simmering on the lowest flame, the meat was still pretty tough (still took some effort with a knife), but the sauce was delicious with rice. Overall I was pretty happy with this dish, though I think I need to dabble with a few changes. Thanks for the recipe!

Spinach Chicken Parmesan

I used a few suggestions - pounded out the chicken breast and added 3 cloves of garlic. I also used shredded (not grated) parmesan, which I enjoyed. The chicken was moist and I loved it, but it was admittedly bland. I'd recommend using more italian seasoning, salt, and pepper, if not adding your own twist. But definitely a good recipe to play with.

Chewy Peanut Butter Chocolate Chip Cookies

Was confused by the reviews, but gave it a shot- followed the recipe exactly, but went overboard with the peanut butter on purpose. Turned out like beautiful store-bought cookies, they spread perfectly and were golden brown on the edges. So easy to bake (approx. 9 minutes for large tablespoon-fuls). Made them for a work meeting, and they were a huge hit!! They stayed chewy and delicious. Wonderful recipe, thanks!!

Blueberry Crisp II

Easy and yummy! I mixed in some of the crumble with the blueberries before topping them with the rest of the mixture, so the fruit had more substance (it became a little gooey). Thank you!

These are buttery, chewy and rich, and SO good with the chocolate chips. I think you could add anything to this recipe (peanut butter chips, butterscotch, coconut?) and it would be awesome.

Mango Cardamom Bread Pudding

I was looking for a healthy bread pudding recipe for our extra baguettes, and this was it! This is a great combo (it tastes like an indian dish that is basically mango pulp with cardamom), and I lightened it up by using Splenda and Smart Balance instead of butter. It was really delicious and not too sweet-- my entire family loved it. Crunchy on top, kind of a custard on the bottom, and the mango adds plenty of fiber! Thanks for this great recipe!!

Sugarless Bars

i made this recipe as muffins (it didn't make a whole dozen) and my parents raved about them, they loved that they were full of fruit and fiber. they had a surprisingly dense and moist texture, which was great. i guess my cravings for a junkier treat got the best of me, but overall this recipe is wonderful since it doesn't use sugar in addition to the fruits' sugar.

Easy Cinnamon Fudge

Chili I

I made this recipe with ground turkey, italian-style tomatoes, apple cider vinegar, even mexican chili powder-- but it STILL turned out good!! It was hearty and very filling, great with tabasco sauce! Thanks for the easy recipe =0)
