About this Cook
30 year old native of Phoenix!! You dont find too many people born and raised here, but AZ is my home and I love it!! I'm a business analyst for a health insurance co, and have worked in the healthcare field since I was 16 (started college when I was a youngster). Been at my current job 7 years and love every minute of it! Having grown up with my maternal grandparents who were originally from the south, I learned my way around a kitchen fast. Pretty much, I've been cooking and baking since before I was tall enough to see over my grandmother's kitchen counter. Memories of standing on a chair or step stool assisting her in the kitchen with various recipes. Fondest would have to be associated with the holidays. They grandparents had a huge pecan tree so lots of pecan pies and other recipes that called for nuts were often baked. Not to mention all the southern cooking that was done. The recipes that my grams has passed down to me I've adjusted to m
My favorite things to cook
The grill always gets a workout - steaks and salmon with dill and lemon. Also, cant forget the southern roots: oven-fried chicken, corn bread (johnny cake), hamhock and beans, pulled pork with bbq sauce, and sweet tea!
My favorite family cooking traditions
Cooking thanksgiving dinner for the family - turkey or brisket with all the sides! Also, baking during the holidays.
My cooking triumphs
Taking over the holiday cooking 8 years ago!
My cooking tragedies
Everyone makes mistakes - but learning from them makes you a better cook!

Quick Camping Pineapple Cakes
Side Notes - You can find the sponge cakes in the bakery department. They're typically used to make strawberry shortcakes. Also, the can of crushed pineapple did not contain enough juice on our last trip, so I used some of the liquid from the jar that the maraschino cherries came in.

Puerto Rican Steamed Rice
Added fresh cracked sea salt, oil, fresh cracked pepper, cumin, and chili powder to water before boiling. Let boil then added 2 cups of rice. Turned out great when combined with Carne Guisada and Habichuelas Guisadas

Habichuelas Guisadas
Im making these last minute to go with my carne guisada (recipe carne guisada III). Since it was last minute, I made a few small changes. Omitted the oil, used 2 cans of kidney beans, chili powder, cumin, and fresh cracked sea salt and pepper. I plan on serving both the carne cuisada and this dish over rice.
