Sweet Potato and Apple Casserole
This is wonderful!!!!! Everyone in my family who like sweet potatoes (I'm a recent convert to them) loved this dish. Even my mother-in-law (who doesn't like them) was tantalized by its cinnamon-y aroma into tasting it and she proclaimed it delicous. My notes to the recipe - (1) use MEDIUM size sweet potatoes to avoid excess potatoes after assembling the casserole; and (2) for families, like mine, who have those disliking pecans (or just nuts in general) -- I halved the pecan halves so they could remove them easier. The top layer of apple rings (I used "Cameo" apples) made this dish very eye-appealing.

Sweet Potatoes and Apples
Being a recent convert to sweet potatoes, I loved it; and so did those family members loving sweet potatoes. I left the pecans in quarters for easy removal for those disliking nuts. Even my mother-in-law, tantalized by its wonderful aroma, ventured a taste and proclaim it very good (she didn't like sweet potatoes!!!!). With the apple rings on top, it has great eye-appeal. It's not overly sweet (like sugar or marshmallows) but naturally sweet from the apples (I used "Cameo" apples). Also, use 3 MEDIUM size sweet potatoes, not large like I did -- too much left over.

Pasta Shells Florentine
Made this at Creative Cooks 4H meeting last night and both the kids and I loved it. One elementary schooler even went back for seconds. The kids are now planning this recipe for their St. Patrick's Day menu. We were eating within an hour. The nutmeg takes away any bitterness that spinach sometimes has. We fed about eight people - no left overs. Wonderful!!
