Spam Musubi

Pretty good! My husband is from Hawaii and so my family loves spam musubi. I am a haoli, so I had to learn how to make it. :-) This one was pretty good. I was all out of oyster sauce, so I used shoyu & sugar, but I am sure the oyster sauce would have added some great flavor. We didn't like the amount of rice vinegar... I'll have to play with that one. All in all, it was good & we enjoyed it! Thanks!

Greek Souzoukaklia

Very good! Just a few minor changes. I used dried cranberries instead of raisins b/c I had them on hand. Love them! I shaped these into meatballs & cooked them in a frying pan instead of the grill. Then, I let them sit in a low heat oven for about 30 minutes while I got the rest of the food ready. This allowed for more of the fat to drain out, while the meatballs still remained moist & delicious. I will make these again. Thanks!

Zippy Tuna Salad

This was good! I didn't have the creole seasoning, but used everything else. It was really good, but nothing I would serve to guests or take to a potluck - thus only 3 stars. I will probably make something like this again for my family as I am trying to eat more fish. Thanks!

Fiesta Potatoes

I made this recipe with a few changes. Didn't have any green chilies, so I sauteed some onion & garlic instead. LOVED this change! I also cut back on the mayo and sour cream a bit. It came out really great. I think it would be good with bacon bits. Everyone in my family enjoyed it!

Barbie's Tuna Salad

YUM! I'd give this 4 1/2 if I could. It was good served in a sandwich with lettuce and very good served as a tuna melt on one slice of bread with a slice of mozzarella cheese melted on top. Delish!

Creamy Pork with Sour Cream Sauce

I give this recipe 5 stars with my changes. Most importantly, I wait to add the gravy (sour cream sauce) until serving. I served the gravy in a gravy boat and let everyone add their own. This way the pork steaks are not swimming in the gravy. I changed the gravy a bit by using 2 cans of soup - 1 cream of mushroom and 1 cream of chicken. I added extra mushrooms and a small chopped onion to the sauce. I chopped some of the mushrooms fine and left the rest bigger because I like the big chunks. I would also suggest crisping up the pork steaks in the broiler for a couple of minutes after baking and BEFORE adding any sauce. Yum, yum! Serve with mashed potatoes topped with the same gravy. (I added a picture!)

Rosemary Chicken with Orange-Maple Glaze

This is a great recipe, but needs a little work. As many others said, the sauce didn't thicken. I think it needs some corn starch (which I didn't have.)I loved the flavors though! I will make this again.

Pork Roast with Thyme

Just as many reviewers wrote, this was delicious! I added some rosemary & sage, and used a much smaller roast. Even with the smaller roast, I increased the amount of seasonings, as we enjoy lots of flavor. Used garlic powder instead of fresh and it was great! Since I only had about 1/3 cup of apple cider vinegar left, I also used a small amount of balsamic. The flavor was so good and the roast, taken out when the internal thermometer read 170 degrees, was moist and juicy!

Lemon Zucchini Bread

My family loves this bread! After reading the reviews, I changed a few things. We doubled the recipe to make 2 loaves. I used the zest of one whole lemon and added the juice of the lemon to the wet ingredients before mixing. I also used half oil & half applesauce to cut the fat. I did npt have any cinnamon, so substituted vanilla. Two wonderful additions were dried cranberries and walnuts - yum! I also threw in about 1/4 cup of ground flax seed to increase the healthiness. After the loaves came out of the oven, I drizzled them with a lemon juice/sugar glaze to give them that little extra touch. Delish!!!

Italian Style Flounder

Yum! I am so glad I found this recipe. I needed something fast and had to use what I had on hand and this worked like a charm! I used thawed flounder fillets, from my freezer. I changed it up a little in order to use what I had - 2 cloves fresh garlic, a little white wine, some salt & paprika, some mild salsa in place of the fresh tomatoes,a few leaves of fresh basil from my garden, and added green beens. After cooking for about 20 minutes, I uncovered the dish and sprinkled on some shredded mozzarella cheese and let it melt over everything. I WISH I had made rice to go with it because the liguid created by all of the ingredients was delightful and would have been so good over the rice. Next time... Thanks! With my changes/variations, I give 5 stars!

Easy Chicken Marsala

Mmmmm... we loved this recipe! I would say 4 1/2 stars! I made a few minor adjustments after reading the reviews. I tripled the sauce and couldn't imagine using less. I used all heavy cream instead of the milk. I also added slightly more wine while cooking. Before I sauteed the chicken, I soaked it in a marinade of green onions, marsala wine and some garlic salt and italian seasonings. I think it added to the tastiness of the chicken. I served this over penne pasta! Really good!

Basil Shrimp

5 stars with my changes/additions! I used all olive oil instead of butter, 4 cloves of garlic, honey mustard instead of brown, and 2-Tbsp. dry basil intead of fresh. I also added a little bit of lime juice. Since this was a last minute meal decision, I only had about 15 minutes to marinade. I cooked them on a stovetop steamer and they were SOOOO delicious! The flavors were amazing, even though I didn't have a long time for them to marinate. Perfect!

Spinach Pasta Salad

This is a beautiful salad with lots of flavor! All of the adults enjoyed it at the family dinner I brought it to this evening. I am not really sure about the kids. I loved the colors and the strong flavors of the lemon, garlic and cilantro. I doubled the feta cheese. I am also glad I read the reviews and made the salad last night, so that it had about 24 hours for the flavors to blend. I was worried about the spinach getting soggy, but it didn't. I actually added half the spinach last night and the rest just before serving, but could have added it all last night and it would have been fine. Great addition to my list of favorite salads!

Tangy Cucumber and Avocado Salad

This was good. The only thing I changed was to switch the green onions for some minced red onion and a little less cilantro. It took on more of a consistency of guacamole when it was mixed with the lemon & lime juices, so I would suggest waiting until time to eat to add the avocado. The flavors were really good and overall enjoyable. I also added some sliced grape tomatoes for color.

Black Bean and Couscous Salad

This recipe was a wonderful springboard to a fantastic salad! I made some changes and additions and got rave reviews at a BBQ today! Here's what I changed/added: I used a whole 10 oz box of couscous and 2 cups of chicken broth. I doubled the dressing recipe (LOVE it!!!) I only used 1 can of black beans and a whole can of white corn. I also added 1/4 cup of golden raisins, 1/2 cup of dried cranberries and 1/4 cup of toasted slivered almonds. I think the dried fruit adds a welcome bit of sweetness. YUM yum! I just made it a second time tonight - to take to another potluck tomorrow! Thanks!

I made this today for the first time and my children love it. I have only had this once before and this recipe tasted a little bit different that the first one I tried. I changed the recipe just a bit... used less sugar (justa little over a cup) and next time I will use the amount called for in the recipe. It is sweet, but a tad bit sweeter would be good. I also used 2/3 reg. cocnut milk and 1/3 lite. The bottom came out really thick. (I used a 9x13 pan as suggested in the reviews.) I think I would like it in a slightly larger pan so that it would come out a bit thinner. I loved the topping and wouldn't change a thing about it! I used the food processor for the cassava and maybe it was still a little bit too thick. I think it would be better shredded. Thanks for the recipe. I will make this again with a little experimenting. I think it would be nice with some toasted shredded coconut on top!

Thai Green Curry Chicken

Mmmm... We LOVED this! I don't like things to be too spicy (as I know that some Thai foods are spicier than I can handle) and this was perfect. I even added more of the green curry paste than the recipe called for and it was so good! My kids even liked it! Great recipe!

Tasty Tuna Pasta

My family liked this, but for me it was just "so-so!" Nothing special, but fine for a quick dinner when I haven't planned anything better. I think my son had 3 helpings and even my toddler ate it up, so I will keep this on hand.
