Chicken Coconut Curry
I used boneless chicken breasts and each piece was cut into four sections. I browned the chicken first, removed them, and then cooked the carrots, onions, and celery. When the vegetables were slightly cooked, I put the chicken pieces back along with the rest of the other ingredients. I used Trader Joe's bottled curry spice. I definitely will make this dish again...simply delicious!

Pecan Pie Bars I
I didn't have enough pecans so I added chopped walnuts to make up the difference. It turned out great. I brought these to a party at the school where I work and they were a big hit. I used butter instead of margarine for a better flavor.

Urban Legend Chocolate Chip Cookies
When I added the dry ingredients to the butter and sugar mixture, I used my fingers to thoroughly mix the ingredients together. I then used a small ice cream scoop to drop the cookies onto the cookie sheet. My teenage son says they're the best chocolate chip cookie that he has even eaten. I definitely will bake these cookies again. They're simply terrific!
