Whoopie Pies

I've never had whoopie pies before and made some adjustments as others have indicated. I added a small package of vanilla instant pudding (was all I had on hand) to the mix. I also altered the filling by using 1/2 cup butter and 1/2 cup shortening and used 2 cups powdered sugar instead of the 1 cup of white sugar. I used 2tsp of vanilla extract. I used 3/4 cup of milk and 1/4 cup of whipping cream to give it a more thickness. I also strained the milk/flour mixture as I had small bits of flour in my mix. Overall, they were OK. I'd probably cut the powdered sugar down to 1 1/2 cups next time as it was a bit too sweet (my fault for altering it though). I also decided to just cut my cakes in half and make sandwhiches that way.

Pizza On The Grill I

Very tasty!! My husband and 5 year old said it was the best pizza we've ever had. I've never had grilled pizza before but this was fantastic! I didn't use the pizza sauce here, I used the easy pizza sauce III from this site which worked out well. I also used a sausage, onion and green pepper mixture that I sauteed on the stove so that the vegetables were soft. Next time, I think I'll try med-high heat instead of high once it's flipped over since it was hard to melt the cheese without burning the bottom.

Smoky Chipotle Hummus

Wow - this is fantastic!! I've had regular hummus and I think the chipotle and sundried tomatoes really takes this dish to the next level. I served with grilled pita bread and it was a hit - even for those who never had hummus before.

Tex-Mex Burger with Cajun Mayo

Wow - I've made these twice now and this last time, the burgers were to die for! We are always looking to help spice up the meat of the burger without overpowering it and this is it! The only changes I made were eliminating the jalapenos and then adding a couple dashes of cayenne pepper. We didn't want it too spicy with our 5 year old eating a burger. Fantastic, I'm not sure we'll ever make burgers without spicing them up with this recipes again!

Red Skinned Potato Salad

This is great!! I made some minor modifications - added a little red onion instead of green onions and used just a couple dashes of white wine vinegar as that was all I had on hand. Yum!

Butterscotch Chewies

These were OK. I had a package of butterscotch chips in my pantry that I wanted to use up. The cookies were very thin (which is OK) but way too sweet. I probably won't make them again.

Marinated Flank Steak

Baked Potato Soup

This was pretty good! I used 4 cups of chicken broth, 4 tablespoons of flour and decreased the basil by 1/2 a teaspoon and added 1/2 teaspoon of thyme like others had suggested. The thyme adds alot but I'm not quite sure if I really like it. Maybe I'll make the soup again and only use basil and then make my decision. I will say that the hot pepper sauce adds a nice kick!!

Blue Cheese Beef Tenderloin

Good recipe - I loved it more than my husband. We had to buy tenderloin steaks and hubby just can't completely enjoy them if they're not cooked on the grill. Next time, we won't buy the steaks if we can help it. Great recipe!

Easy Decadent Truffles

These were great! The truffles were really easy to make and not too messy! I made three types. One with vanilla extract, rolled in a combination of powdered sugar and cocoa. Another one I made with mint extract, rolled in cocoa drizzled with dark chocolate. And finally, the last batch I made with Rum extract, rolled in coconuts. To make the truffles, I used 1/2 semi-sweet and 1/2 milk chocolate. Great recipe - Thanks!!

Rich and Simple French Onion Soup

This was very good. I would have liked a little thicker (just slightly) soup and I definitely took the advice of others and carmelized the onions. I used a little gruyere cheese and then decided to put a slice of provolone on top. The melted provolone was a little rubbery so maybe I'll try some mozarella next time.

Unbelievable Spinach Calzones

I think this recipe is a good base for a great calzone. I served with generic pasta sauce from Supertarget and it was really good overall. I halved the recipe since it's only the hubby and me and made the recipe almost exactly as written, except I added pepperoni to add more flavor. With that said, next time I'll reduce the amount of italian seasoning a bit (thought it was really strong), reduce the amount of ricotta cheese and add more mozarella cheese. I will also add a clove a garlic, dice up the pepperoni and add some onions and/or mushrooms. Great recipe though to alter and adapt to your own personal preferences!!

Boilermaker Tailgate Chili

Fabulous! My chili has just finished cooking for 2 hours and I love it! I tweaked the recipe a bit for fear of it being too spicy. I cut the cayenne pepper in half, omitted the hot sauce and added a little more beer. Smells and tastes wonderful! I look forward to the flavors melting together tonight in the fridge so we can enjoy even better chili tomorrow night for dinner! Thanks!

Italian Sausage Soup

Wow...all I have to say is fantastic!! My husband said it was the best soup he's ever tasted. Based upon personal preferences, next I think I'll omit the carrots and perhaps add some small potatoes. I served with a nice salad and some french baguette bread - definitely a keeper!

Chicken and Dumplings III

This was my first attempt at Chicken & Dumplings and boy, it was so easy and the final product was very delicious. This is going to become a regular in our household since my husband requests this once a week. I used cream of chicken soup instead of the celery since my husband can't stand the taste of celery and I also added carrots & a couple cut-up potatoes. I too, had to let it cook a few minutes longer to ensure the biscuits were done but it was worth the wait. Absolutely wonderful!! I used a good quality biscuit (but definitely NOT the flaky kind as I know that wouldn't hold up) instead of the cheap kind based upon another recommendation & they turned out great. Thanks for such a great recipe!!
