About this Cook
I'm 30-somthing with a husband & three sets of twins ages 9, 7 and 3. I grew up with a mother who was a fantastic cook. I loved watching and helping her and started to pick and try new recipes by myself when I was probably only about 12 years old. I was a decent cook when I married my husband 11 years ago. But my husband was a trained artisan baker and somewhat of a "foodie" so it was time to kick it up a notch. I don't make up a lot of recipes, but I do like to take a recipe that I've been successful with and then find a way to make it my own. I know I have a keeper when my kids say, "You should make this again, Mom!"
My favorite things to cook
I like cooking, but love baking. I especially cake baking. I'm always on the lookout for the perfect recipe for every variety of cake...you know, the perfect pound cake, chocolate cake, etc. I also enjoy finding ways to get nutrient dense foods into my family's diet.
My favorite family cooking traditions
My family's New Year's Eve party since I was about 10 is centered around a HUGE table of finger foods & desserts. Even when we can't get back to celebrate the New Year with my parents and siblings, we have our own table full of our favorite party food. I also make sure that every birthday in our home is celebrated with a cake from scratch...no cake mixes here!
My cooking triumphs
I have mastered roast pork, roast chicken, spaghetti and meatballs, and chocolate cake.
My cooking tragedies
I can't seem to make a really good roast beef to save my life. I'm no good at fish yet, either. I guess the most inedible thing I ever made was ham gravy for Easter. The first time I made it, I added bouillon to the ham drippings while making the gravy just as I always do for chicken or pork roast gravy. I learned quickly that ham drippings are plenty salted enough! Needless to say, we had plain mashed potatoes for that meal.

Romanian Apple Cake
AWESOME! This was so delicious in a real comfort-food, homey kind of way. I made this for my husband to take to the Thanksgiving lunch he had at work. I used five kinds of apples (Macintosh, Granny Smith, Gala, Pink Lady, and Jonagold). I baked it in a bundt pan and then when it cooled (to make it pretty for sharing) I drizzeled it with glaze that I made with powdered sugar, milk, vanilla, cinnamon, and a dash of salt. I will say that I, like others, thought I'd done something wrong when I was through mixing the batter. It's all apples! But as it bakes, the cake puffs up and around the apples and it's just yummy. I love the big apple chunks. It's like apple pie meets spice cake. So good! I'll be making this a lot in the future.

Fideo (Mexican Spaghetti)
This was just okay for me, though I do think it has potential. It turned out kind of dry, but maybe I just need to add more water? I'll make it again because I think a couple of small changes would make this pretty yummy. Next time, I will use chicken broth in place of the water. I'll probably add some black beans, too. It's the kind of recipe that lends itself to personalization.

Roast Pork with Maple and Mustard Glaze
De-lish!!! The glaze does start out very thin, as someone mentioned, so there's no spreading it over the roast. I poured it over then let it marinate in the refrigerator for a few hours before putting it in the oven. The glaze thickens as it cooks. I basted about every 20 minutes or so. Mine was a 4+ pound roast and it took about 2 1/2 hours to get done. I put potatoes and carrots in for the last half hour or so. My whole family loved this. It's a bit rich and real maple syrup isn't cheap these days, so I probably will save this for special occasions from now on. But what a treat!
