I love my husband, my son, and my Army life! I'm a stay-at-home mom, and very part-time massage therapist. The thing I can't live without is fresh basil, oregano, and rosemary from my herb garden!
My favorite things to cook
For convenience, I tend to lean toward one-dish meals... casseroles, skillet creations, baked pasta, and soups. With a small family, it means leftovers for lunch the next day. Why cook twice, when you can cook once?
My favorite family cooking traditions
Since we live far from family, every time I go home to visit, I'm asked to make Stromboli. My husband's family likes me to make the Kraut Bierocks.
My cooking triumphs
I'm most proud of the fact that I can now make up my own recipes. I never would have known how to invent dinner without using Allrecipes first.
My cooking tragedies
I fear making Fried Chicken. I've never gotten it right! Burnt on the outside, pink on the inside! That's one dish my boys won't brag on me about!

Cheese and Broccoli Chicken Soup
Great, big pot of soup! Followed a suggestion to leave the roux in the pot, then added the liquid about two cups at a time and stirred it well with each addition. I had no lumps. I cooked my roux with a medium-size yellow onion and two cloves of garlic. After the roux was thinned with the liquid, I added the rest of the ingredients, plus a container of fresh mushrooms. This added to the simmer time, but I wasn't in a hurry. I can't wait to have leftovers tomorrow! Next time I'll use closer to 8 cups of broth/stock.

Naan
I chose this naan recipe because I had all the ingredients on hand. I used regular All Purpose flour instead of bread flour, and they turned out fine. I cut the recipe in half and prepared the dough in my bread machine. I used a stove-top cast-iron "grill," and made them without garlic and added it to the butter while on the grill. The bread was tender and delicious. My son loved it, and it went well with the Hummus III recipe and fresh veggies. Thanks, Mic!
