About this Cook
I am a writer by nature, although not by employment. Ah, to write is my dream and I know I will make it big some day. In the meantime I love spending time with my daughter and grandsons, friends and other family. And I love cooking for them all. I've lived many places, including Italy for three years and I learned so much while I was there. I grew up in a household that encouraged me to try just about every type of food and so I'm always game for new things!
My favorite things to cook
Anything spicy - I LOVE hot foods regardless of whether it is Mexican, Thai, Indian or anything else. Throwing in some pepper improves just about anything in my opinon. I really love the combination of sweet and spicy together, as in salsa's and such.
My favorite family cooking traditions
My father was the 'exotic' cook in our house and so I learned to be adventurous from him. "What's that daddy?" I would say and the next thing I knew I might have a mouthful of rattlesnake meat or bear sausage or just about anything strange and unusual you can imagine. I do tend to stay away from those exotic meats now, LOL, but I will still try lots of different foods.
My cooking triumphs
I have been told I make the best potato salad (my mom's recipe) and guacamole around. Nothing really special about those things, I just think it's all the love I throw in.
My cooking tragedies
Once when I was living in Italy my friend and I wanted some guacamole. We didn't get good avocado's very often and the only ones we could find were like bricks. A cookbook I had said you could pop them in the microwave for a few seconds to soften them. Can we say disaster? Terrible - an avocado should NEVER be microwaved, under any circumstances, no matter how desperate you might be!!!

Best Brownies
I have been meaning to try this recipe for several years, but hadn't gotten around to it. I don't make brownies often but needed some for a bake sale. I have read through probably 1,000 reviews paying close attention to those that were lower than 3 stars. These came out perfectly for me; satiny top and chewy around the edges, a bit fudgier in the middle, just the way I like them. I did not frost them because a really good brownie never needs frosting, but that is my opinion. I think a lot of the bad reviews must be because of how we each like our brownies. What is chewy to me could be cakeish to someone else perhaps, not sure. I do know a few things though, how you mix brownies makes all the difference in the world. I melt my butter and then remove it from the heat while I mix the dry ingredients thoroughly and beat the eggs. Then I stir in the sugar, eggs and vanilla and blend well. Next I add the dry ingredients at once and stir to mix. There probably will be a few small lumps, like uncooked popcorn kernel size and that's okay. Just make sure all the batter is moistened. If you 'beat' it too much it will rise more and there is where your 'cake' type brownie comes from. Just use a good old fashioned rubber spatula or wooden spoon, either works fine. It is a bit more complicate than a mix, but so much better.

Classic Goulash
I debated about the rating on this recipe. It's probably really good to someone who hadn't had it or had a version similar to it. To me it was very bland and tasteless as well as too liquidy. I grew up in Kansas; our family recipe has chili powder and cayenne as well as paprika in it. It is thicker and very, very hot. You add a spoonful of sour cream to temper the heat.
