California-Style Spanish Rice
THIS HAS BEEN A FAVORITE OF MINE FOR MANY YEARS. THE ONLY THING DIFFERENT IS THAT I ADD ABOUT 2 TEASPOONS OF SUGAR AND WHEN IT IS ALL MIXED TOGETHER WELL I COVER IT AND PUT INTO 350 DEGREE OVEN FOR 25 TO 30 MINUTES OR UNTIL RICE IS COOKED. IT FLUFFS UP NICELY AND YOU DON'T HAVE TO WATCH IT ON THE STOVE.

Old Fashioned Potato Salad
THIS IS GREAT!! MY FAVORITE! Try using minced cucumber chips or bread and butter pickles instead of relish. Plus, a little of the pickle juice and a dash of dry mustard. YOU WILL LIKE IT!!

Red Salmon Pate
I have made this for several years. The only difference is that I add 1/2 tsp. or so of liquid smoke. I prepare 2 or 3 batches and put into a plastic wrap lined fish mold. Refrigerate for several hours then turn out onto a platter and decorate with sliced almonds for the fins and pimentos & olives for face features. you can get real creative and make a beautiful display for an appetizer table. Serve with crackers
