Buttercream Icing

Curiosity made me interested in this as I had never made a buttercream with shortening. Definitely will not ever do again.... buttercream frosting is much better with butter only. Only good thing about this was that it was fluffier than if made with all butter. It had so much of a shortening taste, that I added cocoa to make it a chocolate frosting instead.

Hot Water Cornbread

This recipe is similar to how my mother used to make them, minus the sugar. However, I the ladies at church whip up a batch and they just used self-rising white cornbread and added hot water to it until it was the consistency of mashed potatoes. Then, she dropped spoonfuls in deep fat. They looked more like hush puppies than pancakes, and they were delicious. No need for butter, honey, or anything else. Wonderful with collard greens.

Caramel Cake I

This rating is for the frosting only! It was delicious, however, I had a difficult time getting it to thicken even though I followed recipe to the "t" using a candy thermometer. I beat it with electric mixer for several minutes... nothing happened. I finally refrigerated it, beat it again, refrigerated again, and beat it again on high for several minutes and got a consistency I could spread. Thank goodness I cooked my cake in a 9X13 pan instead of layers because the frosting never got stiff enough to frost cake sides. I sprinkled the pecans on the top. Also be prepared to wait at least an hour for the cake to cool to correct temperature. All in all it is a very tasty frosting, just time consuming.

Buttermilk Pound Cake II

Good taste, but somewhat on the dry side. Also, I would suggest omitting the lemon extract or using real lemon juice. The extract gave it a little artifical taste.

No Drip Ice Pops

These were ok. I was looking for something lo-cal to make and with ingredients I already had. I used strawberry-banana no-fat yogurt and cherry sugar free jello. Very tasty. Be sure to freeze completely to avoid the spongy texture. I'll try other flavors later and maybe see if I can leave the banana out.

The Whole Jar of Peanut Butter Cookies

Others obviously love this recipe, but I'm just not one. The texture was crumbly and kind of cake-like. Also, I was very surprised that they lacked taste. With all that peanut butter, I expected a lot more. I'll go back to my old Betty Crocker recipe.

Soft Oatmeal Cookies

I followed recipe exactly as it is written exactly that I added 1 C raisins. Cookies were very good and soft. I would have rated a 5 but I think the recipe on the Oatmeal box is tastier.

Holiday Chicken Salad

Soak the cranberries in enough hot tap water to cover for about 15 minutes and then drain on paper a towel. This will keep them from drawing moisture from the mayonnaise and thus creates a moister salad. I also added a little garlic powder.

Chocolate Mint Cookies I

I'm not a big chocolate & mint fan, but the group I made these for liked them pretty good. Be sure to tell people that they have mint in them though because they caught some off guard who thought they were all chocolate. My cookies did puff up, but cracked all over the top; however, the melted candy hid most of the flaws.

I can't share the love for this recipe! As written, it is very bland. I would suggest adding cinnamon and possibly more sugar or choc. chips to the recipe. I was very disappointed with the recipe

Party Pinwheels

Excellent! I made these for a party and had several requests for the recipe. I followed others' suggestions and only used about half the pkg of ranch dressing. I also added some cut up smoked turkey slices. I would advice you to save a little bit of the cream cheese mixture to "glue" together any of the tortilla sections that may come apart when you start slicing.

Slow-Cooked Country Ribs in Gravy

Very good! Very tender and favorful. I did make a few minor changes. I added some brown sugar and honey (to taste). I also salted and peppered the meat before cooking it. I also made a thickening agent out of cornstarch and water to thicken the sauce. I will definitely make these again.

Golden Au Gratin Potatoes

I'm basing my rating on making the recipe exactly as-is with no changes. The potatoes never really got soft, it was greasy but dry (no suace!), and had an artifical taste. I'm glad I made it the day before my event so I can replace it with a different recipe.

Apple Spice Cake

Absolutely delicious. I wish I had made it in a Bundt pan, but I thought tube pan meant Angel Food pan. So it wasn't so pretty, but the taste was fantastic. I topped with a thin butter frosting and cut way back on the nutmeg since I don't like the flavor of it. Highly recommend.

Kentucky Butter Cake

The cake came out perfect and I had no trouble at all taking it out of the pan. The sauce however is a different story. I turned hard and crunchy and just sat on top of the cake. I didn't soak through at all. Just glad I made it a few days before I had planned to serve it. I definitely will not be serving this one!

Merry Berry Salad

Delicious!! I tested this today to see if I should serve for Christmas and I definitely will. Very pretty and festive looking. The dressing is wonderful...kind of tart, sweet, & savory all at the same time. I added pieces of roasted chicken which made it even better. This is a keeper!

Gourmet Sweet Potato Classic

Really good. PLease go the extra step and use fresh potatoes instead of canned ones. I microwaved mine which only took a few minutes. The only thing I changed was that I used an 8X8 pan instead of the 9X13 recommended one I didn't nearly have enough casserole to fill a pan that size. If making for a lot of people, you'll want to double the recipe.

Best Big, Fat, Chewy Chocolate Chip Cookie

I was not impressed. Although the cookies are good, the taste is no different than the original Toll House cookie; however, they do remain soft. My biggest problem was getting them done. I cooked for 18 minutes and finally gave up and took them out and they were still undone in the middle Also, I think they would be better if the amt of choc chips was cut back to 1-1/2 cup.

Debdoozie's Blue Ribbon Chili

Thank you for this recipe. I've tried several recies and this is my favorite. I've tried for a long time to make chili without the tangy sour tomato taste. This recipe takes care of that. I would have given 5 stars, but I made a few minor changes and I'm still not sure I like the full 2 lbs of meat in it. It's a little too thick for my taste. I used Pace Picante Med for the salsa, used kidney beans and black beans, and since I couldn't find William's mix, I used French's Chili-O and added a little sugar. I'm entering this in a church chili contest next weekend! Update -- My chili was not the favorite. Almost everyone at church preferred a thinner chili. However my minister would only eat mine and came back for 2nds. Actually, I came home with only enough for 1 more bowl, so it was good, just not the winner. I think my part of the country is not used to chili being that thick.
