Spicy Orange Teriyaki Marinade
Very good. The orange marmalade and cilantro added a nice flavor. I forgot the pineapples and it was still quite good. Looked good, too, with all of the specks of green cilantro and bits of orange rind from the marmalade. Try this at least once, it's a fun way to dress up teriyaki.

D's Famous Salsa
This was excellent! I used whole canned tomatoes instead of stewed tomatoes. I made a spicy and a mild version, and both were good. For the spicy version, I used 5 fresh habeneros, seeds and all, which made it as intensely spicy (you have been warned) but still enjoyable (in other words, I didn't have to stop after two chips). For the mild version, I used 2 or 3 fresh jalepenos, seeds and white parts removed, which turned out to be incredibly mild to me, but to my mom, who can't tolerate much spice, it was about as much as she would want. Good basic recipe; I'd recommend experimenting with different kinds of fresh hot peppers (not canned) until you get it as spicy as you like it. Wear gloves when working with the peppers, though. You do not want to find out what it feels like to get pepper residue in your eye, and I'm told that washing your hands won't necessarily get the pepper off... Next time I'm going to make double or triple batches and freeze some. This was really good stuff; I can't ever find salsa that's as spicy as I like it, and this stuff hapens to taste a million times better than the stuff you buy in the store, too.

Creamy Rice Pudding
I made this tonight and was somewhat disappointed. The rice stays too distinct from the pudding with this technique; when cooked in milk, it blends better, which makes the pudding creamier. I used a mix of 2% milk and heavy cream, brown sugar instead of white (1/3 cup was perfect for me, but I tend to like my rice pudding only mildly sweet). I used 2 teaspoons of vanilla and 1 or 2 teaspoons of orange zest instead of the raisins and butter. I then tried the pudding and found it too thin for my taste, so I added a second egg and made sure the mixture made it to 160 degrees again. Bottom line: if you have the patience to stir for a while, look for a recipe that cooks the rice in milk. Maybe crock pot versions will turn out creamier rice without being so hands-on. If you just need some easy pudding that tastes reasonably good, go for this one. Try it with orange zest sometime, it's good.
