Zucchini Crepes

I was looking for something to make last night to use up some of the veggies I had on hand. Everything I make from All Recipes I always lighten up, as I am a Personal Trainer. Was great to see this one was already "light". I made 2 changes, didn't feel like making the crepes from scratch, so I used 8" flour tortilla's and also added chopped grilled chicken for protein. This recipe was quick and easy and I thought quite tasty. I will definitely make again.

Bean 'N' Beef Quesadillas

Quick, easy and pretty darn tasty. I had some fresh type salsa on hand so I just used that instead of what was suggested for salsa. Also added a dollop of sour cream. I will make this again.

Pasta Primavera with Italian Turkey Sausage

Easy to make. Made a few adjustments just because it was what I had on hand. For vegetables used, orange peppers, spinach, onion and zucchini. Used turkey polsa kielbasa sausage. This was very tasty and great to have for leftovers.

Fruity Tofu Parfait with Granola

I am a personal trainer and have a vegetarian client that I am trying to help get more protein in her diet. I have never really eaten tofu before, but we tried this recipe together and I was very pleasantly surprised. My client liked it too. In this recipe it tastes a little like vanilla yogurt. Not as creamy, but good.

Lemon Orzo Primavera

I followed the advise of others and used a little extra broth and added my vegies late. I also added some cooked grilled chicken to use this as a main dish. My husband and I both thought this was great. It is flavorful yet light. Definitely a keeper.

Banana Oatmeal Crumb Cake

Very tasty. Great way to use up old bananas. I really like the oatmeal/banana flavors together. I think I could have eaten the whole pan myself. Mine was done cooking at about 30 minutes and I had to cover it at about 20 minutes so that it would not get to brown.

Mandarin Orange Chicken

I thought this was a 4, but my husband rated it about a 2. So I'm settling in the middle. I think that he may not have liked the flavor the hoison sauce gave it. I would say OK overall but not great.

Sea Bass with Honeyed Apples

Anything voted keeper by my husbands standards gets a 5 with me. The only changes I made were the type of fish. The market had no sea bass and the halibut didn't look good so I ended up with sole. I also added chopped pecans to the apple topping. Quite tasty!

Crispy Rosemary Chicken and Fries

This recipe is so easy and quite tasty. The thighs are so moist. As suggested by others I cut the potatoes in thinner wedges. I also used boneless thighs and cooked on convection bake so it was done in about 35 minutes and the convection makes it all a little more crispy. This is a definite keeper.

Elegant Orzo with Wilted Spinach and Pine Nuts

Very good. I had no fresh spinach so I used frozen, thawed and drained. I also added cooked chicken to make this a main dish. For a side I served bruschetta. Awesome meal with a nice glass of white wine. There are only 2 of us and this recipe makes a lot. I've frozen the leftovers. Another yummy meal later in a snap. Thanks for the recipe.

Zucchilattas

After reading other reviews I made a few minor changes and absolutely loved this recipe. First I only made 1/2 the recipe. I cut down on the tomatoes a little, added some salsa, cumin, and seasoning salt. After cooking I also topped w/ a little light sour cream. I am always looking to cut fat so I used an 8 oz pkg of the reduced fat mexican cheese mixture and it was plenty in both amount and flavor. As other said, use a slotted spoon.

Fruit Kabobs with Margarita Dip

This recipe was O.K. Nothing super special. I took it to a family get together for a dessert. If I were to make it again I was use it as an appetizer or snack, not as dessert unless you're looking for something super light. I've had better tasting fruit dips.

Gourmet Chicken Sandwich

This was absolutely delicious. A couple of notations I might add. I used lowfat mayo and it had plenty of flavor. Also I grilled some red pepper and red onions in butter in a separate pan and added it on top of the chicken. For the size bread I had there was only enough spread for 2 sandwiches. I would recommend doubling the spread. We will use this often.

Day Before Mashed Potatoes
