Rachel's Tomato Basil Soup

We really liked this especially topped with just a little sprinkle of finely shredded cheese. Looked beautiful! I used half and half for the cream as that is what I had on hand. I will be making this again and NEVER buying the canned stuff. I recommend only blending half and leaving the other half a little chunky. Reminds me of progressive chunky tomato soup (that I can no longer find in the store???).

Beef Spinach Hot Dish

I made a few alterations to this. I used 4 garlic cloves and 2 onions carmalized first then added beef. Also used fresh spinach. Cheese was mozz/provolone mix. Tasted it before baking and it seemed a little bland so I added a can of diced tomatoes/green chilies. WOW! was really good served on buttered shell pasta! Hubby loved it. I did too. Only 4 stars cause kids not so much. Complained all the way through. *sigh* no matter, just means more for us as leftovers! :)

Alphabet Soup

Kids actually liked this a lot! I wasn't paying close enough attention to the recipe so ended up with this- 3 cans regular V8, 6 c water, 2 tubes beef boullion, 1lb. ground beef, and a half a bag frozen mix veggies w/corn, green beans, peas, and carrots. seasoning salt and Mrs. Dash. Served with a little grated parmesan cheese on top. Yummy!

Slow-Cooked Tamale Casserole

This was good! My kids didn't agree though which is part of the 4star rating. I boiled chicken, shredded it, then put on stove with tomatoes and taco seasoning and olives. Mixed the corn in with cornmeal egg and milk (cut down to 1c). Put chicken mixture on bottom of 8X8 baking dish and poured cornmeal on top. 375F for 30 min add cheese give it another 10 min. Done! I thought it was great, next time I may try a little enchilada sauce on it (or in it) or something. How many things can I do to this to make it different every time??? hmmmmm.... Thanks for the recipe!

Orzo and Rice

My 16 yo sister made this and it came out really good! She is still learning so we had a little complication here and there, ummmm would recommen dissolving bouillion in water before pouring into rice mix, and occaisionally check and stir. Thanks for the recipe, great learning experience!!!

Lemon Thyme Rice

My 16 you sister was pretty much in charge of this dish and she DOESN'T cook. Came out fantastic! No leftovers!!! I used 32 oz. broth, 1/2 fresh squeezed lemon juice and lemon zest, and 2 t. Trader Joe's 21 seasoning salute. AEWSOME!

Lemon-Studded Artichokes

Who knew microwaved would be ok??? I ran out of time and made this as a last resort. It came out great! I will not be making it on a regular basis (I prefer roasted) but when I have to watch my time, this was great. Taste was good and the heart was done enough to eat and enjoy. (I had worried about microwaving) I had a hard time cutting out choke before cooking.

Marinated Veggies

A real treat for my hubby, the lemon lover, for Father's Day! Fabulous! We only marinated an hour. Left out tomatoes and onions but otherwise followed by the book. Will definently make this again.

Chocolate Gravy II

My 16 yo sister made this and it came out great! She has no cooking ability so that's saying something. This is THE recipe to use for Father's Day! LOL Oh she added 1 t. vanilla. Apparently someone else here suggested it. thanks for the tip, it DID help thicken it according to her.

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

I made these as regular sized muffins, doubled recipe. They were great! I changed the baking soda to 1 t. soda + 2t. baking powder and boy did they rise nicely!!! I also cut the sugar back perhaps a bit too much, I would go with 1 cup. Also I suggest putting on a middle to hi rack, the bottoms browned (NOT burnt) but became tougher than the rest of the muffins... I had it on a med-low rack so I think just too close to heat source. Very moist, and being as I originally cut sugar back to 1/2 c (oops!) we will be eating with honey butter! YUMMY!

Seasoned Orzo and Black Beans

Oh my goodness this was good!! I made this for lunch being a crunch with the kids whining at me and I was out of everything I could think of off the top of my head... I was really surprised by the mild good flavor and the way the veggies complimented so well. The beans added a very nice gentle salt flavor, I'm glad I didn't add any extra dsalt like I was considering- and i DID rinse my beans. I can see trying this with all sorts of different veggie mixes and bean mixes... Go crazy with it! Tyu topping it with just a tad of fresh grated parmesean or asiago. Yummy! P.S. I made this with one box of orzo and it made a whole pot of stuff. We will have a lot of leftovers- this could have easily fed a larger family of 8 or more. We had six people eating and I have enough that we could all eat again...

Whole Wheat and Quinoa Pancakes

These came out ok, I used cornmeal and baking soda for powder. The result was a very crunchy puffy pancake. I think it was a good recipe and will make it again but I think with all things quinoa/cornmeal it's best if you let it sit for a while before you cook with it. Next time I will have this maybe prepared the night before so it has a chance to really soak up some of the liquids and pick up the flavor.

Mock Chicken Fried Steak

Goodness my kids LOVED thesE! The official request was can we have them for lunch AND dinner tomorrow??? LOL My hubby who hates chicken fried steak liked this too! I didn't use the spices recommended by the author but used the onion soup mix and baked for 30 min at 380F as one of the other reviewers suggested. YUMMMY!

Nanna's Banana Bread

Baked in an 8X8 glass and came out fantASTIC! added carob chips (all I had on hand) used the 4 bananas like other recomm. Also used safflower oil to make it healthier, subd. 1/2 sugar for brown sugar, 1/2 flour is wheat and accidentally used 2 t of baking soda and no powder (I have one brand of deceptive baking soda that looks just like powder in the round container... grrr SNEAky!0 Raised well above my expectations maybe THAT was a good switch? sifted all dries and did wets in the blender. The bread is beautiful, will make again!

Not Your Mama's Tuna Casserole

I would have given thIS More but really I only used it as a base and played with it a lOT> I used colby jack cheese, fiesta nacho cheese soup in place of one of the cream of mushrooms, several dashes of tapatio, none of the extra stuff on this recipe but spinach and mixed veggies from my freezer. used a little milk and lemon juice in place of sour cream... oh and cooked it on the stove top for a few minutes till it was boiling then let it set with lid on about ten moRE Min so no baking at all. I was in a hurry.. Lol there you have there are good ideas here but I didn't follow at all. oh well

Cornmeal Mush

I double this usually. My kids love it served with honey and milk. It's a nice break from our usual oatmeal. Made it today as I've made the last couple of years and there wasn't enough to go around! LoL I think now I need to start tripling it... :P

Spiced Slow Cooker Applesauce

Did this with 4 large granny smith and 4 large Fuji apples and cut back a little on the brown sugar (NO WHITE!) for a more natural flavor. LOVE IT WILL MAKE IT OVER AND OVER AGAIN!!!!

Sour Cream Muffins

These were ok... I used homemade applesauce (the slow cooked one from this site) and frozen blueberries. Did everything as directed but kinda ended up with a mess- they fall apart in the middle and are stuck to the paper! I might try these again with some changes but as is this recipe wasn't spectacular, just ok.

Slow Cooker Western Omelet

Am trying this next week. So I will update this. I just wanted to add a note that for our hash browns, we don't use the frozen. We put the real potatoes quartered with the bell peppers that are asked for in a blender, fill with water run blender a few times until you have a choppy consistency you like then pour through a colinder. The water keeps the starch from looking burnt and it makes a very colorful presentation. Also the uniformity in pieces size helps it cook better. I will update after we cook this and tell how it went! ;)

Slow Cooker Beef Stew I

OK, we ate this yesterday, YUM! I WILL double or even triple the veggies next time though, it was 9/10s meat! LOL it seemed to be missing a tad flavor, next time i will double w. sauce too and add perhaps a T of red wine... smells great while cooking. wanted to note, i too carmelized one onion and two garlic cloves, then added boiling water and beef stock. then poured into crock on top of meat with flour toss and veggies chopped. also added a packet of onion soup mix to the flour mix.
