About this Cook
I always dreamed of cooking and baking. I spent hours on end watching my mother make dinner every night. I watched Great Chefs from Around the World and Julia Child as a little kid. So why did I not go to culinary school? I listen to my parents! My mother said she wouldn't pay for me to go to culinary school. So I went to a top business school for 4 years and got a degree I dont use. I now am a work at home mom to 3 boys (5/18/04, 5/22/06 & 01/08). I own my own business that does custom invitations, announcements, favors, webpages and more. So yes, I got parties covered, from the invitations to favors to all the food, the parties I throw are one of a kind! I am known for my baking and have baked for some celebrities when they would come to the Hamptons. I hope to focus a little bit more on my cooking/baking and hope to be able to bring that aspect more into my business front. It's wonderful to be able to be passionate about your work :)
My favorite things to cook
I am more of a baker but I love to do anything in the kitchen. I guess in general I love Italian foods to cook mainly because my husband adores them (eggplant parm, chicken cutlets, homemade sauce...). My sauce is probably one of my favorites (non baking) things I make. It's simple ingredients paired with a slow cooking, give it an amazing taste and make the house smell great for days! I make tons at once and freeze it so we always have 'fresh' sauce on hand. I admit, I eat a bunch of my sauce while it is cooking just as is. It to me is perfection - showcasing all th ingredients perfectly.
My favorite family cooking traditions
Every Christmas my mom and both my brothers and myself would help make cookies. Now we're all split up around the country but I still make sure to make the same recipe sugar cookie (in red & green) just like mom made my whole life. I can't picture Christmas without it!
My cooking triumphs
I dont follow recipes well. Its more of a feeling in my bones. So when people rave over my cookies like my Extra Crunchy Oatmeal Raisin, or my Whoopie Pies, or Ginger Snaps, it means a lot to me. One of my proud moments was being asked to make Irish Soda Bread for the company feed at the firehouse. I gladly accepted and made 8 loaves of bread. When my husband came home he said that Mrs. O'Brien wanted MY recipe! When an Irish person asks You for YOUR recipe for Irish Soda bread (and I'm not Irish), you tend to feel good about your baking skills. :)
My cooking tragedies
While making many kinds of cookies at once, I accidentally added salt in place of the sugar! I always taste as i go along so luckily I realized only after the butter and salt was creamed together - I will never forget that taste.. expecting sweet and getting that! Bleck!

Apple Dip
One word: Simple. It could not be any easier than this. I took my cream cheese straight from the fridge to bowl. Added the brown sugar and mixed. I was out of vanilla so added vanilla milk (Silk Almond Milk in Sweetened Vanilla flavor). It was a little lumpy just mixing with my fork so I busted out the whisk and it smoothed out quickly. I tasted it then and while super yummy, I was making it for my kids who are used to straight caramel dip. So I went in my fridge, grabbed the caramel sauce we had for ice cream and added some of that. Whisked again and it looks beautiful, smells, wonderful and tastes super yummy! I can not wait until they get home from school and get their snack! Great base recipe that can easily be adapted to suit anyone's tastes/needs (thinner/thicker, sweeter, more of a certain flavor). Also, easy to scale down and make a smaller amount.

Guinness(R) Corned Beef
I have made this well over 20 times and it's THE BEST! I have cooked it in the oven as directed and also (the normal way for me) is in the slow cooker with an extra 1/2-1 bottle more of Guinness. I put the slow-cooker on low for about 6 hours and it is amazing! Seriously, THE BEST!

Seattle Cream Cheese Dogs
I personally thought these were awesome. My husband and kids not so much. I am not one ot mix my food per say but I thought I'd try it. I made buttery onions, used Philadelphia cream Cheese, Used Sabrett Hot Dogs and toasted the buns. I topped with the mustard (which I never put on my hot dog) and they were oddly so scrumptious. I probably wont make them again only because no one else in my house will eat them but they are great!
