Slow Cooker Pineapple Pork Roast

WHOOEEE! My husband is NOT a meat eater but can't keep his akhands off of the leftovers--if there are any. Since he can't handle fat of any kind, I use pork tenderloin. As others mentioned, I slice a Vadalia onion for under the roast, use a can of whole cranberry sauce and tweak it with teriyaki sauce. The ease of preparation makes this one a 6 star.

I made this for my husband and myself. He went back for his third helping and must have said 4xs that it was REALLY good, a keeper. We had only one large spoonful left. So much for using it for the next night. Thanks.

Garlic Chicken

This was so very easy and good! I used the minced garlic from a jar but think it needs something a bit stronger. I will experiment but that is the ONLY thing I would change. I greased tin foil and put it on a baking sheet to cook the chicken so didn't even have to clean the pan. I cooked it for 28 minutes and it was crispy on the outside and moist on the inside. JUST WONDERFUL!!

Colorful Corn Chowder

We really liked this and will make again. I used skim milk and 1 cup half and half to cut the calories and it was great. I think that I will use a bit more cayenne next time for more pep. I wouldn't change another thing. Thanks so much.

Spinach Pasta Salad

This was SO good and easy. I added some already cooked chicken strips to it to make it a little heartier for my guests. It is very good without, too. Both friends loved it and had seconds and my husband and I finished it for dinner. He requested that I make it again. Thanks for sharing.

Mandarin Orange Chicken

My husband and I both loved this. He told me repeatedly throughout the meal how much he was enjoying it. I did cut the chicken into strips and this worked well. I only used 3 chicken cutlets and had enough sauce. If using 4 cutlets, I would make a bit more sauce as it was SO tasty. Thanks for a winner.
