Salmon with Pineapple Tomato Salsa
I also chose to pour the salsa over the fillet and then bake and it came out nicely. Along with the tomatoes and pineapple, I tossed in some finely chopped red bell pepper. Yum!

Spicy Bean Salsa
This is a really great recipe and I've made it many times now. I leave out the onion, because we don't like the taste of raw onions. I also use fresh jalapenos first rubbed with oil and browned in the toaster oven in the broiler setting, then chopped. Fresh chopped cilantro is also a nice addition. Fresh roma tomatoes are a must! Definately need to let it sit overnight in the fridge to meld the flavors. Thanks, for the great recipe!

Annie's Fruit Salsa and Cinnamon Chips
Great recipe, thanks! I used blueberries, strawberries, kiwi, apples, orange marmalade, and only 1 tablespoon of white sugar. No brown sugar. The cinnamon chips were a big hit! I baked them in a muffin baking pan like someone else suggested and they got a great scoop shape.
