Good Old Fashioned Pancakes

I couldn't find my regular pancake recipe so I just grabbed the first one I found online yesterday morning. This was clearly a good choice!! This recipe made 9 perfectly sized pancakes. They are dense but still fluffy. I froze 1/2 of them and when my 3 year old requested them for breakfast again today, just popped them in the toaster -- perfect!!

Pierogi (Polish Dumplings)

These were delish! Haven't had homemade pierogi since my Dzia-dzia passed several years ago and although I didn't have him standing next to me during the prep, they turened out fantastic!

Amish White Bread

After reading all the raving reviews I was very excited to try this bread. I made 1 loaf and 8 dinner rolls. I should have listened to the other reviewers and reduced the sugar but I like to try the recipe as written the first time. This bread was WAY to sweet... almost tastes like cake! I will try it again, but reduce the sugar to 1/4 cup. I gave it three stars because of it's ease to make but based soley on taste, I wouldn't give it more than 2. A couple of tips: - Reduce the sugar unless you really like sweet (really sweet) bread. - Let is rise, punch it down, then let it rise again before baking. - I only used 5 cups of flour, any more and it would have been to dense (the loaf is already a dense bread). - Bake a little longer than indicated or it will be a little raw on the inside (5 minutes did it for me). ******************************************Update --- I have been making this bread for the past little bit by using only 1/4 cup of sugar and the the items I've indicated above... We have stopped purchasing bread from the store because this is so easy, yummy, and sans-preservative :)... (When I say easy, I mean easy... I work full time and have my 2 year old son all evening to myself while my hubby is at work and I have time to make two loafs and clean up!) Enjoy!!

Double Chocolate Frozen Fudge Pops

These are fantastic!!! I made a few changes - 2% milk instead of whole, 4 tbsp flour instead of corn starch, and 2 tsp peppermint extract instead of vanilla. I added the chocolate chips (dark chocolate) when the pudding was still warm stirred them in while they melted as mentioned by other reviewers. These turned out creamy, smooth and addicting (made 11 - 1/4 cup pops that I made in 3oz dixie cups). I'm going to try cutting the sugar in half the next time and trying different extracts but I will NEVER buy fudge pops again!!! **Update** I don't usually comment to this extent, but I just can't say enough... I've made these twice more cutting the sugar in half (still sweet enough) and adding 1 tsp almond extract to one batch and replacing 1 cup of the milk with coffee in the other. The almond one is tasty and satisfies the chocolate covered almond craving, and the coffee make a decadent cafe mocha fudge pop that I really just can't get enough of.... using coconut extract in the next batch and I can't wait!!

Sweet Potato Pie I

Okay -- so my hubby didn't like this at all - I did. I think he didn't like it because I told him what it was!!! This was my first attempt making sweet potato pie but I will be making it in the future.

My two year old LOVES these... they were extremely easy to make and very tasty. I used 1 1/2 cups sugar after reading the reviews and will likely use only 1 cup the next time I make them (but there will be a next time). Went very well with frozen blueberries on top. For the few who said these were too plain to present I disagree. I used a square muffin tin, and served on a small (4" X 4")... with some whipped cream and berry spilling over this dish is beautiful!

Firecracker Grilled Alaska Salmon

This was fantastic. I made a few minor changes - 1/2 the peppers (thanks to the reviewer who suggested, my lips were still quite warm), 1/2 the peanut oil to reduce fat, and 1/2 the soy sauce (used lower sodium) to reduce overall sodium. Baked since it's cold out and poured a small amount of the cooked marinade over rice, broccoli and cauliflower... Delicious meal!

Beer, Orzo and Chicken

I wasn't sure what to expect with this receipe. I followed exactly except for the pimentos (used red pepper instead). The first few bites were a bit of a surprise but I ended up wanting more when I finished. Needs to be cooked longer than directed - until the liquid reduces - and is delicious the next day.

Asian Salmon

I had my husband make the marinade while I was at work by telling him over the phone. Usually if he doesn't like the look or smell of something (sesame oil) he won't even try it... well... he tried this and told me to give it a 5. This will be served in my house over and over!

Taiwanese Pork Chops

Chinese Roast Chicken with Gravy

I followed the advise of a reviewer and added the oil during cooking along with the chicken broth - turned out wonderfully. Very moist and the gravy was fantastic. I found it a little on the salty side even with reduced sodium soy sauce so next time I will use a little less and replace with a little more chicken broth.

Danish Meatballs with Dill Sauce

The meatballs were excellent. I cut the recipe in half for me and my husband and there were no leftovers!! I served the sauce on the side as my husband prefers the meatball naked and used ground beef in place of the veal. As mentioned by another reviewer, I just mixed the bread crumbs in with everything else to save time and would do it again.

Tuna Salad with Cranberries

This was tasty but failed to 'wow' me. The dill flavour was nice and the cranberries added a sweetness to the sandwich but I don't think that tuna requires a sweet flavour with it. I used less mayo as I prefer my tuna a litte more dry. I think I will try this with chopped turkey or chicken rather than tuna.

Chicken with Curry Dill Sauce

This is an excellent taste combination. I rated a 4 as I needed to increase the curry to 1 teaspoon and used 1 tablespoon of fresh dill (equates to 1 teaspoon dried dill weed) so it wasn't too bland. The dill gives the dish a wonderful subtle flavour. We will be having this again!
