Asparagus and Mushroom Puff Pastry Pie

This was absoulutly wonderfull & loved the leftovers for lunch the next day or two. I made it just as written except I took someone's advice and cooked both veggies together. Put the asparagus in a few min. ahead of the mushrooms as I didn't want anything to be overcooked. I used a store brand puff pastry & had to cut the crust to fit a 9"x13" dish, maybe pepperidge farm is sized differently but they were out of it at the store. Didn't think to use rolling pin to resize it. Nest time I will take others suggestions as to use a egg wash on bottom crush to keep it from getting soggy. Mine wasn't really soggy,it just could have cooked a bit more. One pkg of sauce was plenty & everything else was perfect. Can't wait to make it again. Oh, I also added pam to the baking dish. Hope you all enjoy this as much as we did!

Grandma's Meat Sauce

Absolutely wonderful. The only change I made was to add the wine which was suggested, fresh basil, dried thyme, & sliced fresh mushrooms, didn't cook first just added to sauce. I did use hot Italian sausage instead of sweet, I always use hot. Enjoy. The only change necessary would be the choice between the hot & sweet, everything else I am sure everyone would like.

Baked Fish with Shrimp

This was absolutely delicious, easy to make & better than any fish I have had in restaurants. First of all I couldn't get snapper so I used Kingclip fillets which I had never had before, very fishy smelling but not fishy in taste. Fillets were pretty thick so had to add a little more cooking time. I did as some others suggested and added a few seasonings. I added a little sliced onion, garlic salt, salt &cracked pepper, bay seasoning & 4 Tbls. sherry. I used a half pound of med. cooked shrimp & removed the shell on the tails before I put on fish. Really thought they would be tough as they were already cooked with the cooking in the oven besides but they were just find, not at all tough or dry. This dish is definately a keeper, also can easily be prepared a little ahead of time if having company, get your other sides in order & ready to cook, sit back & enjoy your company with a little drink & just pop it in the oven when ready to cook. I am not a big fish lover but this was excellent & certainly deserves a 5 Star in my opinion.

Angel Hair Pasta with Shrimp and Basil

We thought this dish was very good,there are only 2 of us so I scaled the recipe down to 4 & we had enough for leftovers which were very tasty. I added a little extra garlic & half a can of tomato paste as another reader had suggested, just didn't want to chance it being watery, it was really good, I would say restaurant quality or better & very easy.

Easy Caramelized Onion Pork Chops

This was very quick & easy & really tender, similiar to the way I used to fix them with frenches onion soup. The liquid did not reduce as much as it should but I just put the juises on top of the chops & my potatoes. Very good!

Creamed Onions with Wine

This was absolutely wonderful and as good warmed up left over as the first day. I havc made creamed onions for the holidays for years but only with the white sause. This was so good, just wish I had some more leftovers!!

Artichoke Crab Dip

I fixed this crab spread for Christmas eve as an appetizer & it was great, servered it on crackers. I used fresh crab claw, called Phillips crab found in refrigerated section of seafood department. Not cheap, about $8.00 but worth it & I only used half as I was making this for only 2 people but still had leftovers that warmed great in the microwave. Will definately serve this again.

Dirt Cake I

I made this dirt cake for a friend's birthday & he thought I was bringing him a plant as I had a bunch of silk sunflowers stuck in the top. I also added gummy worms, some hung over the side and others coming out of the dirt(cookie crumbs). I used about 5 gummy worms. This time I am going to put some in the mixture between layers. It was a big hit. My pot measured 7" deep by 9" across, a little narrower on the botton, perfect size.
