Banana Crumb Muffins
Light and delicious! I followed the recommendations and added some cinnamon to the batter and used oil in liue of melted butter.

Mom's Zucchini Bread
Delicious and moist. I used 1 cup of applesauce with a couple tablespoons of oil. I followed other reviewers suggestions of the streusel topping and think it really adds to the bread.
