Mashed Potato Soup

Reviewed: Nov. 30, 2008
Could not be easier!! Tasted good, but a little bland for our taste. I made sure I made it exactly as written before I added anything that anyone else suggested. We certainly could eat it this way, but you can also make it into a loaded mashed potato soup quickly and easily, by adding cheese and bacon. I look forward to using my leftover mashed potatoes this way and playing with the taste too. There is nothing better than a good basic recipe that you can change to suit your family!! Especially when it is this easy to make. Thanks so much for the recipe!

Fantastic Black Bean Chili

Reviewed: Nov. 3, 2008
I have to say that this is something I will always make a day ahead. While I was cooking it I wasn't impressed, actually I was dissappointed! I figured that we were going to toss the leftovers after we ate it the next night. Well I was wrong! The flavors melded together very nicely and we all loved it! I doubled the recipe, but I did not double the beans. 6 cans for 2 pounds of meat seemed too excessive. I could have added one more can, but was glad that I didn't increase it to 6. This way flavor of the turkey was not overpowered by the beans. Thanks for the recipe!

Slow Cooker Chicken Stroganoff

Reviewed: Sep. 27, 2008
We enjoyed this very much...I will definately double it next time. I served it over rice and used reduced fat soup and cream cheese. I am very glad I read some of the reviews before I made this dish or I probably would have added chicken stock to the first stage of the cooking process. The chicken was very moist and juicy...I will recommend this recipe to all my friends...Thank you!!!!

Hazelnut-Mushroom Pilaf

Reviewed: May 19, 2008
We loved this recipe. I used slivered almonds instead of hazelnuts, because that's what we prefer. Otherwise made the recipe as it is submitted. It was great! I made it to take to another house so I actually added a little more broth, because I knew it would stay moister that way!! Thanks for the recipe!

Creamy Pasta Bake

Reviewed: Mar. 16, 2008
I made this for a church function, serving 100 people. They loved it, and it couldn't be any easier. I follwed it exactly. I assembled it a day ahead: added some water to the pan before I baked it; kept the pan covered while I baked it. It took a little longer because of the quantity and the fact that it was cold. We have filed this recipe with the rest that our women's group use over and over.

Hawaiian-Style Meatballs

The sauce was great. One of my guests actually said that they wanted to use a piece of bread to eat the rest of the sauce on their plate! Thanks for the recipe!

Two Ingredient Pumpkin Cake

Reviewed: Nov. 23, 2007
I know this recipe is a cake, but we made it in a cupcake pan and served them as muffins. They were fabulous. It makes 15 muffins. They are moist and tender. Not many calories and open to many variations in the future, now that I know that it works well. Nuts, chocolate chips, raisins etc. We baked them for about 20 minutes. Thank you for the recipe!!

After-Thanksgiving Turkey Soup

Reviewed: Nov. 15, 2007
I didn't change a thing except using fat free half and half...it was wonderful. I think next time I will use some wild rice along with the white rice and maybe a little white wine. We loved the soup in it's original form and it has so much potential to be played with when you have extra ingriedients! Our house smelled like Thanksgiving all over again!

Lamb Feta Peppers

Reviewed: Oct. 30, 2007
These were fabulous! I would include a little more feta next time, but that is just our preference...pine nuts would be good too! I cooked the lamb with the onions before stuffing the peppers. Loved the idea from a previous review about cutting the peppers in half! I made mashed potatoes and a veggie and had a wonderful meal. Thanks for the recipe.

Slow Cooker Carnitas

Reviewed: Oct. 29, 2007
I made this yesterday...it is wonderful. I made a little bit bigger roast and adjusted the seasonings. I shredded it and then refrigerated the juices seperately so that I can skim the fat off today. I will make a few different meals from this recipe including pork tacos/quesadillas and BBQ Pork. Thanks for a good and easy family oriented recipe!!

Split Pea Soup

Reviewed: Feb. 14, 2007
We really enjoyed this soup! I made it with a ham slice that I had and diced up, and to add some extra flavor I added ham soup base to the water. It's creamy and delicious especially on this very snowy night in the Midwest! Thanks!

Pumpkin Turkey Chili

Reviewed: Nov. 3, 2006
We loved this. My family was making faces when I said I was going to make this and then they couldn't stop talking about how good it tasted! I will double this the next time. The only change I made was to add a little (1 tsp) chicken soup base to it. The chili powder and the pumpkin compliment each other so well! All my coworkers asked for the recipe because I wouldn't stop talking about it. Thanks!

Bruschetta with Shallots

Reviewed: Sep. 5, 2006
I took the advise of a previous reviewer and made this the night before let the flavors blend. I did not add the basil until about an hour before I wasa going to serve this. I also let the chopped tomato sit in a strainer for quite a while to drain well. Our guests raved about this bruschetta! Thanks Doreen

Taco Dip I

Reviewed: Jul. 3, 2006
This was very good and our guests loved it. I followed the advise of one of the other reviews and whipped the cream cheese first. It does make it easier to mix with the sour cream and taco seasoning. I didn't have an extra tomato, so I drained some salsa and added it instead and they loved it!!!! Make sure you drain it though, otherwise way too much liquid! Thanks Rose!

Meatball Orzo Soup

Reviewed: Feb. 14, 2006
I seldom give any recipe less than 5 stars. I just figure if I don't have anything good to say.... This time I will make an exception, because I think this has potential, but falls short. Many things can make a difference in this recipe. The spicyness and size of the meatballs used makes a huge difference. I thnk that you should always use fresh lemon juice in a recipe like this. The flavors between bottled and fresh are tremendous. I think the soup could use more orzo too. I also think that this recipe should have at least one more egg. When you make any kind of egg/lemon sauce it should be creamy. This broth was very liquidy. Following the recipe exactly made a very tart soup without a lot of body to it. I will try again, but with modifications.

Bacon Asparagus Pizza

Reviewed: May 16, 2005
We usually make this on a large flatbread instead of a pizza crust. It makes a great neopolitan like pizza that way. Nice and crispy! We sometimes add pesto too! We do everything by sight. Meaning we add as much cheese or tomatoes as we want so that it is never too cheesy or has too many tomatoes. The bacon is great with all the flavors.

Baked Asparagus with Balsamic Butter Sauce

Reviewed: Apr. 15, 2005
This recipe is just like the Cooking Light recipe I have, but it uses Kosher salt. Make sure you use a quality aged balsamic vinegar and let the butter start to brown for the best taste. It truly makes all the difference in the world. I have never added pepper, but often add a little garlic.
