Blue Cheese and Pear Tartlets
Good recipe...even better when I topped them with a little piece of a candied walnut and a drop of honey! MMM! Everyone commented on how unique they were, not the typical appetizer. Excellent with a glass of wine!

Catfish Cakes
Very good. I did add finely chopped red peppers which gave it some nice color and a little extra crunch it needed. This recipe can easily be played with according to your own preferences. I served this with a Dill Mustard sauce that I made using mayo, dijon mustard, dill weed, lemon juice and a dash of salt and pepper. Will make again but I will try to use a little less breadcrumbs as the catfish is delicate and can blend too much into the mixture.

Mom's Zucchini Bread
Very moist and flavorful. I added an extra 1/2 cup of zucchini and 1/4 cup plain yogurt for extra moistness. Turned out great---I put the majority of the batter into one bread pan and it made a big loaf! I saved the rest and made a few muffins with the leftover batter. A keeper!! Would be great with choc. chips too!
