BBQ Pork for Sandwiches
I used pork butt instead of the ribs because the store was out of them, but it still turned out great. I cut up an onion and put the pork on top of that, then poured in about a cup of beef broth and 1/2 of a bottle of beer and cooked it on low for about 8 hours. I drained the juices and put the pork back in the crock pot with a bottle of BBQ sauce and let it cook for another hr or so. By that time I barely needed to shred the pork and it was perfect.

Hearty Meatball Sandwich
Really tasty. I made a few changes to the original, 1/2lb of ground pork along with the 1lb of ground beef, french bread instead of hoagie rolls, red pepper flakes, and sliced fresh mozzarella instead of the shredded.

Gerry's Chicken Enchiladas
These were by far the best enchiladas I have ever made. The sauce was incredible, I highly recommend these.
