If I could give it more stars I would. Here's what I did: I doubled the cookie recipe but not the filling. I dropped TEASPOON fulls onto the cookie sheet, which seemed tiny at the time but turned out perfect. Then, with a fork, I mashed them down pretty flat. Next time I might try the bottom of a glass. Be sure to dip the fork into water every now and then to keep it from sticking to the cookie dough. I baked them for 7 minutes, until the edges were golden brown. When I removed them from the oven they were sort of puffy but as they cool they flatten back out again. Wait a minute or so to remove them from the cookie sheet or they will break apart. Let them cool on a wire rack before adding the filling. These made 6 dozen single cookies, and 3 dozen sandwich cookies. The kids scarfed them down! In my opinion they are even better than the Girl Scout peanut butter sandwich cookies!
