Cranberry Gelatin Salad I
I love this cranberry gelatin salad! I made this for my family's Thanksgiving dinner this year, and even people that usually won't touch cranberry sauce couldn't get enough. I highly recommend using the whole berry sauce in place of the jellied... the berries add a certain something special to the contrast. Also, rather than simply sprinkling the pecans on top of the salad, I mixed them in well with the rest of ingredients to get a little in each bite.. delicious! Be sure to get as much of the juice out of the pineapple as possible, you won't be disappointed with the result!

Cheesy Ham and Hash Brown Casserole
This is a great recipe. I took this to my boyfriends Christmas party at his work, and the pan was empty within 20 minutes! Wonderful comfort food. Rich, warm, creamy and cheesy. The only thing I changed was the amount of parm that went on top. I used only about 3/4 of a cup, and I think it was plenty. All in all, easy to make and a pleasure to eat.

Carrot Cake III
Excellent recipe for Carrot Cake! I made this for a co-worker's birthday, and everyone said it was the best they'd had! I did notice that many reviewers made adjustments and substitutions, but I decided to follow the recipe without making any changes. The only thing I might recommend changing is the amount of confectioners sugar in the icing. 4 cups made for a very sweet cream cheese frosting. Half of that amount of sugar would probably be plenty. I also saved a lot of time by buying a 1 pound bag of baby carrots. I just tossed them through the shredder of my food processor, perfect! No peeling, no hand grating. Try this recipe, its wonderful!
